  • Our good friend chef Romy Prasad has cooked in the kitchens of Michelin starred restaurants in Europe and New York. He's one of the most innovative and creative chefs we know. Luckily for us, he's currently an executive chef in Vancouver.
    Romy invited Scot and The BBQ Boys crew to drop by and guide us through some great summer grilling ideas. Here's his version of whole trout with grilled tomato salsa with asparagus and oyster mushrooms. Romy shows us how quick and easy it can be!

    the tip about oiling the grill and the fish worked as suggested. the timing was more or less the same for me. About the grilling temp, I'm using a gas grill and I try to keep the temp between 450 and 500. I placed the fish over the center burner and after turning the fish, midway through I lower the flame on the center burner to use more indirect heat avoid burning the fish vs turning it again. To preserve the crispy skin, the less movement the better.

    The best grilled fish is the Mexico style, like always mexican recipes are very good. so, its called "Zarandeado fish" which is butterfly and a sauce with (soy sauce, lemon juice, salsa Huichol, salt, mayonaise, oregano, mustard,) and it is put open on a grill holder etc. soo good. crunchy and tasty. you can drive to Rosarito, Baja and taste it at a highway exit called POPOTLA

    This is a dang good job! Dunno where you're from, This is like cooking in Texas. We use ALOT of catfish, trout, flounder, tilapia, and red fish here, bbq over coal, mesquite and or hickory wood. There all in abundance. Kudos to the foil part!

    Awesome, but you can also check if its done, by pinching the neck (Thick part), and check if its kinda falling apart, but they look better when there are no cracks. Its not easy, but to avoid opening them when cooked , simply for aesthetics ;)

    love this vid.. last time i made fish on the grill it came out pretty bad because it kept sticking. great tip with the olive oil- i will apply next time- i love fish on the grill taste

    I try to cook large mouth bass whole on full heat for up to 30 minutes and it always ends up a little tough, raw, and watery on some parts. Someth8ng wrong with the grill maybe

    Make sure you squeeze some lemon juice on top of the skin you just spent 5 minutes dehydrating for turning crispy. If you gonna get a soggy skin and no coal flavor just fillet the fish and cook it in your oven or stovetop. That way at least you can keep your juices for a sauce

    I think grilled fish require more salt than displayed. Salt it well 30-60 minutes before grilliing, so that its flesh can absorb the salt. Pepper no.

    A pinch of salt and a dash of pepper. I hate when they half season food. You can't even taste a pinch of salt.

      Horses for courses. I hate overseasoned meat. All you can taste is herbs and no natural flavour.
