Ingredients:
2 lb sauerkraut
0.25 lb Pork ribs
0.5 lb Polish sausage
1 tsp parsley
1 Cup Celery
1 Cup leeks
2 Carrot
5 Potatoes
1 Onion
3 Bay leaf
2 Tbs oil
2 cloves garlic
1 tsp marjoram
salt and pepper ,sugar

I am sure this soup is a winner, and I love the name kapusniak which sounds quite "fortifying" to me. Foods with foreign names, always a little bit mysterious, beckon me to try them out. As we have been taught in this country (USA), vitamin C is destroyed by heat. So if your source of sauerkraut is still a living ferment, you might consider adding it at the end of cooking after the soup has cooled off just a little bit. I don't require my soup to be terribly hot so that works for me. If your sauerkraut has already been heat-processed (which is often done for shelf stability), go for it, any preparation you can think of. Thank you for the clarity of your instruction.

I haven't actually made this specific recipe, but I have made similar soups many times. Soup is very flexible, and I have enjoyed my soup very much. I make it a little differently each time depending on what ingredients are in the house. It is also quite good when I add cooked beans; it gives them extra dimension.
