  • Easter, or Pasqua in Italian, is one of the country's most important celebrations, with processions, ceremonies and feasts taking place across the whole of Italy. As with many of Italy's holidays, food plays an integral part in the Easter celebrations.
    Here, chef Gennaro Contaldo shows you how to make a delicious roast leg of lamb with spring peas and baby onions - the perfect centre-piece for your Easter lunch this year, particularly if served on a large platter with the peas and sweet onions tumbling down around the meat. Your Easter lunch is a great opportunity to celebrate the produce of the spring season and Gennaro’s leg of lamb recipe is the perfect way to showcase these lovely fresh flavours.
    To ensure maximum flavour enters the meat, Gennaro scores the leg of lamb and rubs in olive oil, salt and pepper before adding black olives and chopped anchovies before cooking. Anchovies may seem like a surprising addition to a lamb dish but instead of tasting fish, you simply get a deep, salty flavour which complements the lamb - delicious!

    For me as a German the lamb goes in the ofen for least 3 hours. Super soft and tender! Great recipe.

      If it is baby lamb it doesn't need that long. An 1 year old lamb has tough meat.

    @Gennaro: Really enjoyed your video. Growing up in an Italian/American family my mother would occasionally cook lamb. (It was so expensive!) She loved it.     Don't ever look to the west for authentic cooking. The nostalgia behind your cooking is wonderful. I try very hard to keep an authentic rhythm behind my cooking. I've never been classically trained, but I love serving dishes that bring my family together. There is nothing better than cutting out western qusine to make people realize there is more to life than steak. Thank you. Salute.

      One can use Italian vs western (i.e the rest of the western cuisine). Italy is European but with its own distinct special Mediterranean flavor. Italy still has its own unique cultural and food heritage in contrast with other European countries, let alone with what most of the world considers today as "western" which is a huge term and does the Italian cuisine a big injustice to describe it as simply western. Italian food is, before anything else, Italian. 🇮🇹

    1 st of all he's cooking on celsius.
    Most of the world cooks in celsius..
    2nd leg of lamb doesn't need to be pink inside. It's not beef...
    If people like well done fine. It tastes just as tender and moist.

    Lamb recipe! salt, pepper, oil, garlic, anion, water, butter, anchovies, broth, rosemary,
    lemon, thyme, celery, carrots, red or white wine, potatoes, oregano, paprika, all purpose
    flour, whatever you like just combine and mix it. lol I am preparing my Christmas Lamb
    in two hours, so am looking what other ingredients in different part of the world people
    like in their lamb recipe. I will use a combination of recipe and styles.

    Second time today seeing someone add anchovies and olives to lamb? I’ve never done that; I usually slit & stuff with garlic $ rosemary; season it well and rub all over with mustard & olive oil. Then roast and baste until done. Cost of lamb today is so outrageous I’d be highly upset using anchovies and it didn’t come out right! Maybe all try one day with chops or shanks?

    Most people in the west like their Lamb rare. I don't!! That's how I like my Lamb, well cooked. I use different ingredients, but when the Lamb is cooked properly it's juicier and more tender. When it's pink the meat is tough and dry, and the ingredients don't come together as intensely.

      Older generation have it well cooked it’s Young’s chefs who love under cooked lamb but pink is fine I don’t like blood with lamb but I do with steak

    Good work. Lamb should be well cooked and tender.especially leg of lamb. We're not cooking steak here? The Greeks cook it for 3 .4. hours covered with just origano hats the best. Pink meat disgusting.

    1) Destroy the meat with a Knife, 2) Overcook the meat, 3) Overcoock the peas. He clearly learnt to cook in the bad side of the Channel xD

      Argument from authority, every cooks has made a lot of cooking, it does not change the fact that it is clearly overcooked. Peas aren't green anymore, meat is brown. For someone who made millions cooking, it's a shame. I know nothing, but if i had cook a lamb this way here, I would have lost my job.

      @CMB No need to be a milionaire or a 3 michelin stars to see and say it's overcoocked, not only the lamb, peas too. My 91 years old grand mother does similar dishes, with a little better cooking of the peas, and it's fine, but she's not a professional cook and i don't have the sames expectetions to a chef with 10+ years of cooking experience.
      At the opposite, his carbonara reciepe is perfectly executed, but this one does not respect several elementary cooking rules.
