    Cooked on woodfire of course makes the flavour absolutely unique. I remember when I was a kid my grandma cooked peas with broad beans and potatoes in her stone oven when she had prepared the fire from wood, stuck the pan in, closed the door of the oven and we walked out of her patio. When the food was ready, I don't know how to describe it ,but the taste , oh my God, I will never ever forget in my life. That was the Greek grandma Maria Papahristopoulou.

    It is an amazing recipe. I am just cooking it. I cut some fresh lemons from my lemon tree, picked some thyme from the mountains of the Peloponnese and bought some greek wine.
    More than delicious!

    I am cooking this recipee Antonio and Gennaro,in Cofu and I have used fresh ingredients like thyme which I collected on the hills of Cordu and fresh tomatoes and that lovely lamb from my butxher which lamb probably grazed up on the hills and once more it is foing to be an amazing meal.
    I am grateful to both of you and Gennaro thank tou for that short video you made in front of my daughter in London calling my name ...Hi Georgia , this is Gennaro.... . I feel very moved and I love you !

    This Is a serie very beautifly done. The music: the Opera arias and the Pieces from the film "il postino", are great. That theme from 'il postino' makes the serie a bit sad Also. I think its because you know Theres a lot of nostalgia in that tune and Carluccio isnt there anymore.

      How exactly do you thing they cooked, right up to the '70- '80s? Tin and copper restorers were extremely common then, and having your pots redone was quite frequent troghout history. In fact, it was the main job and expertise of Gipsy caravans travelling in the Old World. Lower quality pots were made in clay, cast iron and steel are a quite recent addition to cookware materials.

    2.23 When he puts the meat in, afterwards it needs a bit of water to cook.
    This recipes is amazing, I am cooking it now , for a third time, using baby lamb which will take only 30 minutes to cook.

    I personally think peas should be added 10-15 mins before as i don't like overcooked peas. Also these guys are my favourite
