      Bread flour is the best comparison.

    The latest research has determined that Carbonara was invented right after WW2 when GI's in Rome came up with a "spaghetti breakfasts", made from GI ration bacon and egg powder. Enterprising Italian chefs refined it, substituted bacon with guanciale..reduced the now whole eggs to just the yolk, etc. There is no mention of Carbonara in historical Italian culinary histories until just after WW2. Interesting, no?
