Really exciting that you tested this! Thanks for sharing! I think you have received some great advices of improvements for a similar test so I am hoping you would do it again with the adjustments for sitting position and glucose monitor.
I would also like to add that I would hope that you could go at race pace. I am thinking that under the effort and pressure the body is under during race pace. Much more blood is drawn away for your gut and prioritized at muscles for example. This could have a bigger impact on heart rate and your body’s ability to intake solid goods.

You should add a "control" where you sit up without touching the handlebars for as long as it would take to eat something -without actually eating. My heart rate increases just by sitting up.
It has got something to do with the way your weight is distributed. Leaning on the handlebars makes you "less vertical" -and thereby less vertical weight bearing. You could compare it to a difference in heart rate when standing compared to lying.

Good video. Thank you for sharing. I noticed that you sat up on the bike for the first few tests and then you stayed on the bars for the last couple of tests. Heart rate typically increases when you sit up because more muscles are being used to keep your body upright. I believe you would have seen similar results with all tests if you sat upright for the same duration each time, or if you stayed on the hoods each time. One's posture can make a big difference.
With all that said, i agree with you 100% that drinking sugar is way easier than eating solid food, especially when intensity is high like in a race or hard interval. I find it difficult to breathe only through my nose when eating solid food while pedaling harder than around Z2.
Thank you again for sharing. I really enjoyed it. :)

Interesting how uninteresting the result was :) You could add more data by wearing a glucose monitor which is normally used by diabetic patients.
