Opera Cake - Gâteau Opéra

  • Opera cake is considered an“entremets” which literally translates to “between meals”, in French pastry this typically refers to desserts made of layers of mousse, cream, and biscuit (sponge cake). Making an entremet sound so overwhelming, it’s easy to get worn out over the course of a lengthy baking or cooking project. No one ever makes the entire entremet on a given day. So I suggest separating the weighing of the ingredients, the stirring and baking phase from the building phase. It is called the French pastry chefs call it LA MISE EN PLACE. It makes the assembly a lot more enjoyable. All the components can be frozen for weeks and will keep just fine at room temperature overnight.

    Hi Chef Rachida, I love these little Opera cakes, but reading through all the opera cake recipes I found them all too time consuming and DAUNTING!
    Then I happen to stumble upon your video, and you changed my thinking, you made these little darlings seem so easy to bake.
    So I thought I will give them a try....WEll They turned out ABSOLUTELY FABULOUS!!!!!

    Thank god i came upon this video before attempting to make opera cake. Idk why i didnt think of making the other ingredients ahead of time. I was gona make them all together. But thanks for the instructional video! Definitely thumbs up

      CocoNilla100 , I was using Sony 7R II up to march 2018, but I just got the Sony 7 III. I love the Sony cameras.

    A beautifully clear and detailed description Chef Rachida! Thank you for uploading. I've subscribed. I once had a French pastry similar to a florentine biscuit, in Strasbourg, which was called Disque Noisette. It was delicious. Unlike a florentine, in which the nuts & glace cherries are chopped up, the disque had whole roasted blanched almonds & hazelnuts & half a glace cherry resting on a disc of milk chocolate. A glaze made up of (I'm guessing) butter, sugar & syrup, resembling a soft chewy butterscotch was then applied on the nuts. If ever you run out of ideas on what to make for your CZcams channel, please consider doing a video on making disque noisettes.

    Wow love that crunchy base layer which is not present in most other recipes. I think you should've given your chocolate ganache a blend because it seemed broken.

    Beautiful execution! I'm wondering if you could keep assembling with the frames, without removing the frames at each stage. I dont feel comfortable removing them while the cake is not frozen. I would be afraid to ruin the cake.

      You don't have to remove the frames. I also freeze the cake every time I add one single layer before I add the next one except when I am adding the sponge layer since it is already solid. I keep removing the frames to add others, because I have 3, 5, and 6 mm thick.

      I am talking about the frames and I am explaining that it is better to consider making the wooden frames instead of the plastic since they are very expensive.
