      @@ActiveRehabMobility Turkish cuisine has become unique with the mixture it takes from Arab, Greek, Armenian cuisine and of course, Central Asian culture. Therefore, it has more varieties than many cuisines in the world. However, the reason why Turkish cuisine is not promoted in the west is that western standards are considered as "Fine dining", for which you should consume the meal for "a long time" and with "wine". As you can see, I think that finishing these dishes in seconds and consuming them with beer or "ayran", not wine, does not take away from the quality of the cuisine.

    I love Turkish food namely Kebab, Manti, Dondurma, Baklava, Menemen, Simit, Kofte, Kumpir, Meze, Pide, Falafel, Sujuk and Dolma.
    I have visited tourist attractions in Turkey, namely Goreme, Avanos, Pamukkale, Bursa, Fethiye, Capadocia, Nembrut, Selcuk, Oludeniz, Duden, Gobleki Tepe, Kekova, Damlatas, Saklikent, Kursunlu, Uludag and Ephesus.

    Sonny, that meat was pastırma, not pastrami. They sound similar but pastırma is pressed and air dried, then coated with a spice mix, as opposed to pastrami, which is coated then smoked, hence why you noted that it is a little bit dry. The names might share a historical origin, but the foods developed separate in different parts of the world.

      @@igorkreep yes Basturma which converted to Pastirma.There are stories of nomadic Turks taking the meat and placing it under their stirrup when horseback riding squeezing the meat and pushing the blood out of the meat. Essentially Bastir would mean squeezing and the method used now is pressure on the meat by pressing and also salting drying meat then placing spices ( Cemen) that give it that flavour profile.

    • @hakeemed
      @hakeemed Před rokem +2

      You are so right, but a slight correction if I may: pastrami is cured in brine first and, as you had mentioned, basterma (middle eastern/eastern cured beef) is air dried.

    It's a great video as always! İstanbul has lots of different food to try , but in İstanbul you can only scratch the surface. Turkish cuisine varies depents on which region you are in , and every region has so many different food to taste so that's why you can only scratch the surface in İstanbul. Next time when you visit Turkey i recommend you to try " iskender"(basically doner kebab with butter&tomato sauce) , kokoreç(made with lamb intestine cooked over charcoal - trust me you won't regret eating it -) , mantı(minced meat inside dough , boiled in water ,served with yogurt and melted butter on top) , şaşlık (some type of kebab) , yaprak sarma(it's vegetarian - some rice,currants,spices inside a grape leaf) for dinner , and künefe(dessert with some cheese inside - cheese has no salt in it -) , katmer(clotted cream and pistachios inside very thin dough) and baklava( it doesn't need explanation for itself :D ) for dessert.
