The reason the rolling method didn't work is probably due to the friction of the folder.

Chef here, initial sharpness is the least important factor when buying a knife. It's a scam. You can sharpen almost anything to a razors edge. How long does it hold its edge? How hard is the steel? Carbon content? Flex? Rust resistance? Grip? Ergonomics? These are the real questions you should want answered. This particular knife is made of a stainless steel with a hardness of 57. It is pretty standard for an average quality kitchen knife. Not suitable for a professional kitchen as you would be sharpening it every 15 minutes but should be fine for a home cook. Unless you cook alot. Pretty easy to sharpen though. Good knife for beginners to practice cutting and sharpening. The shape isnt my favorite but shape is more of a subjective thing based on your technique.

I bought a worksharp knife sharpener that's got a stand, a spot that holds the knife in place, and all that, and it works on a type of pivoting lever system. It actually works really well. I used it a few times on bigger knives, and when I used it on a smaller knife, the knife was too small to place in that holder, so I had to free hand it. The way the sharpener works actually helped me overall. I learned what angle to keep the knife at and developed a kind of system that works perfectly fine for me. I get my knives sharp enough to shave with. I want to get some real sharpening stones now, but I would say those gimmicky devices are great for if you're just starting out and learning, and once you learn how to do it, then you can move up.

Great content tho.
the second cut wasnt that much deeper than the first cut lol, you used your hand to make it go down the rest of the way the second time but not the first time.
I’d recommend a plastic gear paste instead of oil/water based lubricant. It can protect the gears and make them more slick resulting in them being faster, stronger, and quieter.

The sharpness isn't just the only element needed to be present in this experiment for it to be cut in half. The proper inclination of the board and gravity takes a crucial part too.

By the way, a technique and old blacksmith in my hometown told me was, when sharpening a blade even with the new technology now to do it, you do it in one way only, don't go back and forth, it's either back or forth but repeat it until you get the desired sharpness
To slice that orange into 2 pieces, you need more force in pushing the orange or try elevating it higher so that it creates more force upon falling and the knife can cut through it clean. Your knife should also be in place and not move.
Notice how the orange sticks in about the same amount and also how he does pushes the knife down much faster on the tester The tester can only work accurately when you do it slowly he pushed down fast so that it would say it was sharper than it actually is the second time
