Simple and Perfect Lamb Rack [Easy] - Ep. 94

- Lamb rack isn't something that should only be eaten in restaurants! It wonderfully easy to cook, and the options for flavouring are endless. This one is a simple herb and garlic rub, then baked in an oven until medium rare. Cooked to perfection, this is one recipe that shouldn't be intimating!
Lamb rack
400-500g lamb rack
Salt and pepper
For the garlic and herb rub
3x garlic clove, minced
2Tbs thyme
2Tbs rosemary
2Tbs oil
Sear on high heat after seasoning to seal in the moisture. Rub with garlic and herb rub, then into the oven for 20mins or until internal temperature is around 48-50C (120F to 125F) for medium rare. Remove from oven and rest for 10mins.
Cut and enjoy!

How long would you sear and cook, for the lamb to be medium well?
Sear would be the same time, just enough to seal and brown the outside. Cook time would increase by around another 5mins. You are aiming for an internal temp of 60 to 63°C (140F to 145F).
