Beer Battered Onion Rings | Pour Choices Kitchen

  • Simple, yet delicious. With the help of a little food science, you can elevate your onion rings to something special. Dare I say...better than any other type of ring? I'm talkin' engagement rings, sonic rings, the one ring to rule them all. You get the picture!

    Grocery List:
    1-2 lbs yellow or white onion
    1 cup all purpose flour
    1/2 cup cornstarch
    1 tsp baking powder
    1/4 tsp baking soda
    1 tbsp Cattleman's Grill Blackening Seasoning (or you're cajun seasoning of choice)
    3/4 cup beer (keep more around incase batter is still too thick)
    1/4 cup vodka
    Dipping Sauce:
    1/2 cup mayo
    1/4 cup sour cream
    1/4 cup ketchup
    1 tbsp Worcestershire sauce
    2 tsp prepared horseradish or hot sauce
    1 tsp ground paprika
    1/2 tsp sea salt

    Man great job with these! I love my boy Kenji but his videos are sometimes borderline unwatchables with that POV style he uses (motion sickness is a real thing) so I had never come accross that freezing tip.

    Is there a reason to mix the beer and vodka? I’ve always done it with just beer.

      From Kenjis food science experiment “Because vodka is more volatile than water, it evaporates more quickly, which dries out the batter faster and more violently. That creates larger bubbles and even more surface area, in turn resulting in a much crispier crust.”
      I’ve done it with both just beer and his method and can confirm his is crispier.
