Instead of discarding the inside of the lemon you can use it to make regular lemonade and then substitute the pink lemonade with the lemonade you just made! This way you will use every part of the lemon in the recipe AND the finished treat will look more like a lemon wedge bc there won't be any pink tint to it :)
My aunt has a ton of hybrid lemon trees. One of them produces lemons with pinkish flesh and another produces yellow and green striped lemons. And they all taste great!
if you're vegan/vegetarian and you want to make the lemon jello wedges you can use agar agar powder which can be found at most Asian food markets. the texture is a little less smooth than gelatin, but it's still really delicious. use a teaspoon of agar agar and half a teaspoon of cornstarch mixed with a teaspoon of water per 2 cups of liquid you use (don't exceed that amount otherwise it gets WAY too firm) this is the most important part if you're using agar agar: you MUST bring your liquid to a boil and let it boil for 1-2 minutes otherwise the agar agar won't set and it will be a mess! i know this is completely unrelated to this video but can you do more pampering videos or a morning/night time skincare routine or drugstore favorites? i just love these kind of videos! also the grilled peaches look soo good!!!

For the lemonade jello slices, you could use limes to make it look like little watermelon slices 🍉

I agree with making your own lemonade but if you wanted it pink, add strawberry or raspberry purée.

For next time- put the lemons in a muffin tin to stand up straighter! You won't have to worry about them moving around while chilling!
