    About 3 years ago, I developed a Keto Coconut Bread recipe, and it was one of my earliest bread recipes sinch I started this youtube channel. It became quite popular, so I decided to remake this bread to create awareness and with slight adjustments. I increased the loaf size a bit and reduced the amount of psyllium husks. While coconut flour makes wonderful keto cakes with light and fluffy texture but when used for making bread, the texture is quite dense and heavy just like almond flour. Hence, the dough does not rise much even with more rising agent.
    In most of my keto bread, I prefer to use egg whites as it helps to boost with the rise resulting in a lighter and fluffier texture and does not taste eggy. However, coconut flour is super absorbent and requires more eggs and liquid. You may think that 7 whole eggs are a lot for a loaf of bread but considering the amount of coconut flour used in the recipe, it really does require that number of eggs. Interestingly, the eggs helped to make the coconut flour taste not so overpowering, and the coconut flour makes the bread taste not so eggy. The texture is moderately soft and once toasted, the crust is crispy with tender crumbs.
    For those of you who prefer using egg whites, I will be showing you how to do it in a separate video. However, this recipe will require quite a lot of egg whites so I will be showing you how to use fresh egg whites, liquid egg whites and egg white powder. This version will produce a better rise and lighter texture so stay tuned for it.

    NUTRITION INFO PER SERVING
    Total carb = 3.0 g
    Dietary fiber = 1.8 g
    Net carb = 1.2 g
    Calories = 62
    Total fat = 4.7 g
    Protein = 2.6 g
    For best results, weigh the ingredients!
    DRY INGREDIENTS
    Coconut flour = 150 g (1 1/4 cups)
    Whole psyllium husks = 27 g (3 tbsp) (Ground until half its original volume then weighing it)
    Baking powder = 21 g (1 1/2 tbsp)
    Salt = 4 g (1 tsp)
    WET INGREDIENTS
    Eggs = 7 whole large eggs (403 g)
    Apple cider vinegar = 45 ml (3 tbsp)
    Coconut oil = 45 ml (3 tbsp) (OR any keto friendly oil)
    Hot or boiling water = 300 ml (1 1/4 cups)
    DIRECTIONS
    1. Preheat the oven at 350 F or 180 C.
    2. Add all dry ingredients into a big bowl. Mix until well combined.
    3. Add all the wet ingredients (except the hot water) and mix for a while. Lastly, add the hot or boiling water and mix until a soft dough is formed.
    4. Transfer the dough into an 8x4 inch loaf pan lined with parchment paper. Spread evenly and leave the top round.
    5. Top with black and white sesame seeds (optional). Press seeds down gently to ensure they stick to the dough.
    6. Bake for 60 minutes at the lowest rack.
    7. Cool completely before slicing.
    8. The bread can be kept at room temperature for a few days provided you have a cool and dry climate. Otherwise, it is best to refrigerate earlier for up to a week and freeze for up to 3 months.

      Actually, you can use whole eggs for most of my keto bread recipes that use egg whites. The ratio of whole eggs is half of the number of egg whites. However, there will be a lack of rise as the fats from yolks hinder the rise, while protein from the whites helps to boost the rise. If you do not mind the lack of rise then you can use whole eggs.

    I was inspired by your recipe and just made my own bread very successfully!!! Finally!! Thank you so much! I made some adjustments as I didn’t have enough of eggs this morning. So I only used three eggs and was adding coconut flakes without measuring but by the look of the final consistency, similar to the one of your mix. I love the taste and it looks super presentable (I can proudly share it with my family and friends😊)
    Also, I checked your other video regarding mistakes. That was very useful and now I understand that I used too much of psyllium husk powder in a past in my mixes.

    I made a loaf of this recipe and the taste was really good. My question is my loaf was not as tall as yours, so I am hoping you can give me a few tips. I used double acting baking powder but used only 11 grams. I used a 8x4 baking pan. Thanks in advance

      The 21 g of baking powder is based on double acting baking powder, so you do not need to reduce it. Coconut flour when used in bread tends to be heavy and dense hence, more rising agent is required to help with the rise. Also, if you are using whole psyllium husk, you need to grind it until half its original volume then weigh it. Most issues with keto bread are caused by the incorrect use of psyllium husks so it would be good if you can check out this tutorial video, if you have not done so.

    I made it and it turned a nice loaf of bread that I could slice it easily into thin Slices
    My only issue is the powerful egg smell. Can I use egg replacement or flex-eggs in this recipe instead of the 7 large eggs?
    Can someone help?

      Remove the white stringy placenta from the eggs...it seems to make it eggy

    Hello., just want to ask the ration between ground psyllium husk and psyllium husk powder? Is 1 tbsp of ground psyllium husk : 1/2 tbsp of psyllium husk powder?

      I don't really have the exact ratio. But based on experience and feedbacks, 1 loaf of my keto bread with 27 g (3 tbsp) of whole psyllium husks ground until half its original volume, you will need only 1 to 3 tsp of preground psyllium powder. Please check out this tutorial video for better understanding. You can see the difference between both loaf of bread using self ground psyllium husks and preground psyllium powder at the end of the video.     I just followed the steps and ingredients, except:
    1. I didn't put psyllian husk (I don't have any)
    2. I beat the eggs instead of putting them directly into the mix
    3. I just used 2 1/2 tbsp of baking powder (1 1/2 should be the correct one)
    4. I used an air fryer instead of oven (but followed the time and temperature)
    Is it supposed to taste sour? I couldn't figure out what's wrong

      Keto bread is complicated therefore, a lot of experimentation is required before getting it right. You need to understand the ingredients. Psyllium husk is the most important ingredient as it acts as the gluten. Hence, it cannot be left out. And all the ingredients cannot be substituted as it will not work.       If using preground psyllium powder, you only need a small amount around 1 to 2 tsp as it is very concentrated

      Personally, I feel it does not taste eggy. It's probably masked by the coconut flavor. It does not taste sweet to me, but I can taste the salt
