I published a video on Keto Coconut White Bread about 2 years ago. That recipe uses 14 fresh egg whites. Today, I am showing you how to use egg white powder which is more convenient as you do not have to deal with the leftover egg yolks.
If you can't tolerate Psyllium husks or unable to get hold of it in your country, this is a great alternative. The bread rises well and is so light and soft. Of course, without psyllium husks, the texture is naturally more cake-like and crumbly, but it is still a good alternative. It does not taste eggy but you can certainly taste the coconut flour. If you are a fan of coconut flour, then you will enjoy this bread.

NUTRITION INFO PER SERVING
Total Carb = 1.0 g
Dietary Fiber = 0.3 g
Net Carb = 0.7 g
Calories = 76
Total Fat = 6.0 g

INGREDIENTS FOR THE BATTER
Coconut Flour = 90 g / 3/4 cup
Baking Powder = 16 g / 4 tsp
Apple Cider Vinegar = 30 ml / 1 tbsp
Coconut Oil = 100 ml / 6 1/2 tbsp (OR any keto friendly oil including melted butter)
Salt = 2 g / 1/2 tsp
Egg White Powder = 44 g / 1/2 cup
Room temperature water = 245 ml / 1 cup (This is to hydrate the egg white powder)
Other options
1. Fresh Egg Whites (room temperature) = 7 large (250 g)
2. Liquid egg whites from cartons = 250 g
(Note: When using fresh egg whites or liquid egg whites from cartons, OMIT the room temperature water to hydrate the egg white powder)
INGREDIENTS FOR THE MERINGUE
Egg White Powder = 44 g / 1/2 cup
Room temperature water = 245 ml / 1 cup (This is to hydrate the egg white powder)
Cream of tartar (helps to stabilize the meringue) = 1/2 tsp (optional)
Other options
1. Fresh Egg Whites (room temperature) = 7 large (250 g)
2. Liquid egg whites from cartons = 250 g
(Note: When using fresh egg whites or liquid egg whites from cartons, OMIT the room temperature water to hydrate the egg white powder)
DIRECTIONS
1. Preheat the oven at 350F or 180C.
2. In a bowl, add the flour, baking powder, egg white powder, salt and mix until well combined.
3. Add the apple cider vinegar, coconut oil, room temperature water and whisk until a thick batter is formed. Set aside.
4. In a separate bowl, make the meringue. Add the egg white powder, cream of tartar, water and beat with a handheld mixer at medium to high speed until stiff peaks.
5. Fold the meringue into the batter in 3 batches. Do not mix. The fold method is like scooping up the batter from the bottom. If you simply mix the meringue into the batter, it will deflate the meringue. The volume should be significantly increased. The batter is light and smooth.
6. Pour the batter into an 8 x 5 x 4-inch loaf pan, greased and lined with parchment paper. You can also use a Pullman loaf pan with similar size or close to it. It's important to use a tall pan.
7. Bake at the lowest rack for 50 minutes or until cooked. It is done when the internal temperature is 200 F or 93 C. In the video,
8. You can enjoy this bread when it is still warm.
9. Without psyllium husks, naturally the texture will be more cake-like and crumbly but still a good alternative if you are intolerant or unable to get hold of psyllium husks. This bread is so light and soft. You can eat it on its own, top with your favorite spread or make sandwiches. When toasted, the crust is crispy, and the crumb is tender.
10. The bread can be kept at room temperature for a few days if you have a cool and dry climate. Otherwise, it's better to refrigerate earlier for up to a week or frozen for up to 3 months.

I wonder if it would be possible you make a keto bread with the following ingredients: oat fiber, coconut flour, instant yeast, natural eggs (if necessary) without powder eggs, Xanthan gum (if necessary), without psyllium husk or powder, no tartar powder. It doesn't taste like bread,it's more like unsweetened bake goods😁it's super soft & moist(coconut flour makes it taste more sweet). Tastes wonderful.... it's not too coconuty.

Thanks! I have not done that yet simply because whey protein powder is so expensive in my home country and I think everywhere else too. But if there's a demand for it then I will look into it.

It says in the description that she has an older video (2 years ago) that uses 14 egg whites. I used to make coconut cake with egg whites so I was wondering the same thing, then the thought of wasting so many yolks made me think twice. I might have to buy powdered egg whites just to try this recipe. It looks great! Edited to add that she included the substitution of liquid egg whites in the description.

i think there is too much egg white for a bread recipe! this needs to be adapted for cost effective for me only to get a loaf. also would be nice to see what the texture is if you used less egg white and added psyllium husk? i think this will be the better bread texture result I would prefer to eat. also what is the texture by adding almond flour. i think from all the recipes so far this looks to be a good loaf to make just that using so much fresh eggs and then more egg white protein, is too much for me. also have you considered using bamboo fiber, I am seeing this as also a great ingredient used a lot also in the egg protein powder recipes. I would like to see this recipe using a donut extruder to see if the air is retained in the fried donut, also a good idea for bagels to extrude into water. most recipes i see in keto for donuts/bagels is dense and uses hands or cookie cutter to make the donut and is also baked. thanks for all the experimentation and research.

Yes, you can taste the coconut flavor. If you are a fan of coconut flour, then it's great. If not, I wouldn't recommend it.
