    Hi, thanks very much for the best ever Coconut Bread! The first time I didn’t cook it long enough but it was still great, 2nd time left it in 30minutes @ Gas mark 6, turned out light and fluffy! I used the quick method! It will keep in the fridge for a few weeks, if you wrap the pieces in kitchen towel the in cling film and into a sealed bag. Best of luck!

    I've got a lot of coconut flour around that I have no idea what to do with because I'm just learning how to bake. I was glad to find so many helpful videos on your channel dealing with that type of flour. This one was really helpful because I really don't want to use 7 or 10 eggs to make a small loaf of bread. I'm well retired and can't always get to the store, which makes me pretty cranky. So thanks for all of your posts, they're very much appreciated and I'll be exploring several of them. I’ve been making coconut flour baked good for years and never found a good bread, until now! It has a nice rise on the top and the texture is much like wheat bread I make. I used a mix of flax and psyllium husk. Usually, my coconut recipes have an odd bitter taste and I wasn’t sure if it’s a baking powder/soda reaction to my baking pans and non-stick and silicone. I used parchment this time just in case. No odd bitter taste. I may reduce the honey to 1/2 tbsp next time. I topped the bread with everything but the bagel seasoning-delicious! Thanks for this recipe!

    It is very good, I can easily eat it as bread, but a little bit sweetened, it would make a tasty "pound cake". I would try with egg whites only, to avoid the eggy taste. Anyway, a very satisfying and filling bread. I would also mix in some nutritional east for a little bit of yeasty taste. I used yellow flax, next time I would use black ones for a more earthy taste. Thank you for your great recipe.

      You'll have to test it out and see if the eggs sit well with you. Every body is different so it is hard to advise. It sounds like your oven is in Celsius. Then the baking temperature should be 190°.

    So I should have just made 1 loaf to try it but I made two. The batter was a little thick so I thinned it out using a bit of heavy cream (I used this in the recipe also). The end result was that the loaves didn't rise and the toothpick came out clean but they weren't cooked in the middle (and caved in). How would I make it rise more? Use more baking powder? What did I do wrong? I feel like this can be my go-to keto bread recipe. Thanks.

    Since I discovered this recipe in June, I've been making it twice a week; but always with flax meal. I have a question: you said we can substitute psyllium husk or ground chia seed to the 1/3 of cup of flax meal. But you didn't say if the substitution is a 1-to-1, meaning if it's 1/3 of psyllium husk or 1/3 cup of ground chia seeds or are there adjustments to make if using psyllium husk or ground chia seeds? Thanks a lot. By the way, even though I know the recipe by heart now, I still listen to it every time, while making the bread.

      Please be careful with flax meal. It can be poisonous when "opened" like being crushed. It also oxidices very very fast. Like within hours after the shell being broken. There is plenty of information about it online and my country even advice people not to eat it at all. Kind regards

    @leelalicious I followed the exact same measurements as your recipe, and made 3 attempts, but all 3 times, it came out meaty (like coconut meat) instead of dry on the inside. Did you face anything like that while trying at your end?

    • @Leelalicious
      @Leelalicious  Před 10 měsíci

      Hmm. I am not sure I understand the 'meaty' texture. This is what is called a quick bread recipe, like banana bread. Or similar to a cake but less or no sugar and quick leavened (baking powder/soda) instead of yeast in a wheat flour bread. So the texture and consistency is definitely different from say white toast. To get a similar effect, I recommend slicing the coconut flour bread, and toasting each slice to give it more of a dry, crunch crust on the outside. Hope this helps

      @@Leelalicious so sorry. I finally saw the note at the end. If I sub almond flour, would I use the same amount as the arrowroot? Thank you. Looking forward to trying this

      @@judysbakeryandtestkitchen1654 Yes with almond flour use the same amount as arrowroot. It's not exactly the same texture, but helps to lighten up the overall crumb texture

    Damn it! now I know what to do with that Coconut Flour, I was about to throw it out today. It seemed quite useless staring at me in that sweet corner, now I'm gonna bake that bad boy.

      You can try to replace it, but it will definitely effect the texture of the bread. I am not sure how it will come out
