Country Style Meatloaf Recipe

  • This easy to make meatloaf recipe is the ultimate comfort food made from few ingredients and that is guaranteed to bring smiles around your table.
    Ingredients for this recipe:
    For the Meatloaf:
    • ¾ loaf Italian Bread, soaked in bread and squeezed
    • 1 seeded medium-diced red bell pepper
    • 1 seeded medium-diced green bell pepper
    • 1 peeled small-diced yellow onion
    • 4 finely minced cloves of garlic
    • 3 ½ pounds 90/10 ground beef
    • 4 large eggs
    • 1 ½ tablespoons Worcestershire sauce
    • sea salt and pepper to taste
    For the Glaze:
    • ¾ cup ketchup
    • 1/3 cup packed light brown sugar
    • 2 tablespoons soy sauce
    Serves 12
    Prep Time: 15 minutes
    Cook Time: 60 minutes
    Procedures:
    1. Preheat the oven to 375°.
    2. Add the squeezed out wet bread to a large bowl along with the peppers, onions, garlic, ground beef, eggs, Worcestershire sauce, salt and pepper and mix thoroughly until completely combined.
    3. Divide the mixture between to 9x5 prepared loaf pans and pack it in tight. You can line one of the pans with bacon as I did in the video for extra flavor if you prefer.
    4. In a small bowl mix together the ketchup, brown sugar, and soy sauce until combined and add it to the top of the meatloaf and spread around to coat the top.
    5. Bake in the oven at 375° for 50-60 minutes or until cooked throughout and reads 165° internally.
    6. Rest for 3-4 minutes, slice, and serve.
    Chef Notes:
    Make-Ahead: You can make this up to 1 hour ahead of time. Wrap in foil and keep warm in the oven at 200°.
    How to Store: Place cooled and covered in plastic for up to 4 days in the refrigerator. It will freeze well covered for up to 3 months. Thaw for 1 day in the refrigerator before reheating.
    How to Reheat: Place your desired amount of meatloaf into a pan or on a tray with 2 tablespoons of water and cover with foil and cook at 350° for 8-10 minutes or until hot. You can also heat in the microwave.
    This recipe makes enough for 2 loaves and will feed 6 people per loaf.
    In the meatloaf glaze, you can swap the brown sugar for regular sugar or honey.
    Make sure to press the meatloaf into the loaf pans to compact it so that it does not fall apart when slicing after it is cooked.
    Make sure the meatloaf reads 165° internally using a thermometer before removing it from the oven. It is ok if there’s a little pink in there, it’s like eating a medium to medium-well hamburger.

    I've made many good Meatloaf's. I used your recipe and my husband had 3 servings. He was Sooooo impressed and asked me why I whated so long to make it and that's it's been years that I didn't make it. I made one 2 months ago and he said impossible. Delicious 👌😋

    Moist breadcrumbs is a game changer! In the past I have added dry breadcrumbs and eggs to my ground meat but this is way better! I used BBQ sauce for the glaze, tasted great. Thanks! I really enjoy your videos!

    I LOVE meatloaf paired with mashed potatoes. My preferred gravy is tomato ketchup transformed to savory by stirring in Worstishire, Soy, garlic & onion powder. I usually look around and see what else might fit too.
    Hunt's makes a canned "meatloaf" sauce and mine works pretty good too!

    Okay I never usually comment but I have to on this one! Made this AWESOME recipe tonight for family. First of all, you are so professional and exquisite in executing your videos- wonderful editing and talk through. The recipe is just delightful and delicious. I personally love a very involved recipe, I had so much fun with this. Wet bread= game changer. You definitely have me as a subscriber now!! One thing I wish I did differently- I used one part 96% lean ground beef and one part 80% lean ground beef. For some reason I didn’t believe you on only using very lean beef- believe the man people! Still turned out veryyyyy good, compliments all around the table. Just fell apart a bit, that was my B. Anyways- thank you for your work and recipe! You got a new commie here 👍🏼

    I read a bunch of the reviews and they turned out good for everybody but my experience was it was mushy so I must not of got enough water out of it but it tasted good I’ll try it again

      I also didn't like it. We lived frugally, I'm sure mom used way more bread than meat to stretch it. My meatloaf is similar to this except I use 2/3 ground beef, 1/3 ground pork.

    Well I’m sorry to say that this is not old school meatloaf. Old school meatloaf and the correct way of making it is equal parts beef ground pork and veal. If you can’t find the veal then at least A mixture of beef and pork. Also that Beef should be no leaner than 85-15. When adding diced vegetables like bell peppers and onions they should be sautéed for a few moments in butter to soften them up a bit and we all know that butter makes everything taste better anyway. The garlic crusher was invented for people who were lazy or just didn’t know how the diced garlic just my opinion. The wet bread is a good thing I always did 50-50 half water half milk. The key to a good meatloaf is also not overworking the meat. That is why the eggs should be whipped first and then added to the meat putting the eggs in the whole you have to really work it through to get it equal. One of the keys to a great meatloaf is also nice crust on the outside. You cannot achieve that putting it in a loaf pan. The loaf pan was originally for bread and some people start putting their meat in it because meatloaf kept falling apart. Form your meatloaf and put it on a greased cookie sheet. If making a 2 pound meatloaf in addition to the wet bread also add a quarter cup of dried breadcrumbs. This will not dry out the meatloaf because you are starting with a good consistent the meat of 80-20 or at least 80-15 with pork. Also note if you are adding mushrooms and some people do just remember the mushrooms will make your meatloaf moist so the breadcrumbs will help. So it is not my intent to criticize this recipe I just read some of the reviews and when people started calling it all school and other people saying they never made a meatloaf before I just thought I would jump in. I made 40 meatloaves every Wednesday for 15 years for a restaurant in Pittsburgh and they never had leftovers on Thursday lol. Making a healthy versus of meatloaf with ground turkey or chicken it’s just not meatloaf there are some things that just shouldn’t be messed with. Never buy generic ketchup or mayonnaise and I’m also partial to namebrand mustard.
    I’m sure this recipe that you see is working for some people and that’s great.
