Thank you for sharing. I miss my Dad. He was a person of few words but he had a few dishes and his character.
my mom always made boiled potatoes with the meal. If fresh white asparagus was in season she made it with as we called it "Spargel". Most the time my mom just served it with plain brown gravy and there was nothing plain about the gravy.
Guga calls Picanha the "Queen of steaks". I have cooked it several ways and favor cutting the pichanha in 3 finger thick sections and putting them on a rotisserie over charcoal and/or wood. I remove the rotisserie from the grill periodically and slice pieces off as they get the caramelization and medium rare doneness. Then the rotisserie goes back on the grill to cook the next layer. Repeat until all the Picanha is cooked and sliced. I slice it into a foil pan and cover with foil to keep it warm between slicings. It's a bit labor intensive but the results are fantastic, especially for sandwiches. Great video on your method of preparing the Picanha! Those mushrooms look good.

I'm not much for inspiration and heartfelt feel-good content, but your video rocked! Me and my dad are very similar, and I probably grew up in the same era as you (tool shirts and jnco jeans). But food was always the bond that kept the sicilian family together. Keep up the great content, chef! Love your channel dude!

I miss my father...big time. And he passed away in 1993. He's been gone a while now and we didn't really start to bond until I had my first son, Ryan. Ryan was 4 when my dad died. He never got to teach his grandson how to fish or hunt or any of the things that he loved to do. Enjoy your fathers while you have the chance. Cherish every moment you spend time with them. Time goes by fast and they age just like we do.

Beautiful! Happy Fathers Day to you both. My Dad is 81 lives in a different state (I was a bad teen) He was always so supportive of me in every way. He was a cook in the service and I learned from him everything. We talk every day or every other day and we laugh so hard and talk about food and our past and everything in between. Blood is not thicker than water because he is my Step Father. One of the greatest joys of my life. Thank You, I'm going to call him!
I'm sure he'll appreciate the call, but he would appreciate the visit that much more... At 81, his time is short, surprise him with a visit and a treat this Father's day. Make sure he knows exactly how much you appreciate him.

where you use powdered onion/garlic in the white sauce can I just use fresh? I tend to react to all kinds of powdered spices now post head injury but I seem to do ok with their fresh counterparts, an over activated immune system. For that same reason can I leave out the ketchup/pureed tomato, I have to avoid deadly nightshade food groups.
