    Learn step by step how to make Cod Fritters, a classic from the Portuguese cuisine. The video includes all the tricks and secrets to have the perfect light and delicious batter, the perfect appetizer specially with a cold beer. Originally salted cod is used in the recipe but fresh cod works just as fine. Brazilians also loves this appetizer and usually have them at bars with a glass of chop (tap cold beer), this is a classic that I can't leave without!

    We make this snack in Trinidad and Barbados and maybe some of the other West Indian islands and Guyana. We use salted cod fish though, soaked overnight, boiled and shredded with a little flour or potatoes, eggs, onions, green onions, pepper, black pepper, garlic, salt, and hot pepper. We do not separate the egg yolks from the whites. We serve them with a sweet and sour dip like a tamarind dip. The Portuguese brought them to the islands around 1838 after slavery was abolished.

    maravilha! nunca fiz os bolinhos com a clara em neve também, só com os ovos inteiros. essa dica de congelar é maravilhosa, pois muitas vezes os bolinhos se desfazem no óleo quando estão em temperatura ambiente.

    That's not cod!
    There's no need of salt because the portuguese dried cod is very, very solted.

    The finger shapes are called Quenelles. My local Portuguese has failed to deliver twice so far. 1st time as they had no driver but more annoying is the 2nd time when I Pre-booked the delivery and was told they could not because they were to busy?

      I also add whole grain wheat flour to enhance the stiffness of the dough... It works perfectly.

    Another trick is if you have a wooden chopstick, you can stick the end in the oil, and when little bubbles form around it, your oil is ready.

    Theres a trick to test if your oil is at the right temperature. Take some of your cod fish fritter batter,just a small little pinch of it. Then drop it into your oil. If it sizzles and start frying, you know what i mean,then ithe oil is ready.

    Totally dope and nuts at the same time. Good trick with the potatoes just bake them - scoop out the insides and you have 1 - nice dry mash 2 - Skins to pop in the freezer and use at a later date. Note to self - I couldn't find matches anymore and throwing my disposable lighter in the oil was not a good move...

      Vantagem?Pasteis de bacalhau sao feitos sempre com bacalhau salgado.
      Alguma vez comeu bacalhau fresco?Nao sabe a nada,é dos piores peixes que se pode comprar,por isso quase nimguem o come no sitio onde ele é pescado.

    Não Raíza! Não são assim os típicos pastéis de bacalhau em Portugal! Para começar, o bacalhau é passado no passevite tal como a batata. Além disso, nem ele nem a cebola são fritos. O bacalhau vai só cozido e a cebola vai crua para a massa. Também não pode deixá-los fritar tanto. Tem de os tirar enquanto eles estão com uma cor castanha alaranjada. Esses já estão muito escuros. E não é preciso levar ao frio antes de os fritar. Eles ficam sequinhos à mesma indo directamente da moldação para a frigideira. E para quê o sumo de lima por cima dos pastéis? Nunca vi nada disso por aqui. De qualquer modo, já está na altura de voltar a fazer uma receita oriunda do país colonizador do Brasil. Que tal favas guisadas com entrecosto? Tem de experimentar.

      Alexandre Bento Aqui no Brasil nós temos este costume, de temperar os "petiscos", principalmente os de frutos do mar... com limão. E um bom chopp para acompanhar... Bolinho de bacalhau sem limão é amor sem beijo é macarrão sem queijo!
