      To be fair, there's basically no chance of a moist turkey if you roast it whole. It's too big and light and dark meats should be cooked to different temperatures anyway.

    Mr May’s reaction to this topic alone is the soul reason to watch this. Utter legend. Just for the record I do think that Ketchup does have its place but I would have to question the sanity of the person who would put ketchup on a roast dinner. Still just goes to show you what I know.

    Christmas dinner for me has always been belly pork, chicken or beef. Tomato ketchup shouldn't be anywhere near a roast, gravy, horseradish or mustard is the way forward. Gravy is a MUST.

      @@caw25sha in my family we have far too much food to ever want another roast on Boxing Day. Big roast for lunch with Christmas pudding for dessert, then in the evening we'd have cold cuts of ham and turkey with all kinds of sides and trifle for dessert, and then around 10-11pm the sides would be passed around again, and cakes and far too much. It's caused by a tradition of having the immediate family lunch and an extended family evening party.

    James nails it, it's all about the sugar. Take the sugar out of many things and people stop liking them, because they have become 'addicted' to sugar, conversely add sugar (like in Ketchup) and people start to like foods they normally hate. Boil your sprouts with a tablespoon of sugar and watch kids gobble them up. If kids are not weaned off sugar when they are young, it can take ages to resolve, and adds greatly to poor health later.

    I'm with James on this one, we should leave ketchup to the yankees, it's way too sugary and sweet.. mustard, horseradish, tartare sauce, Branston pickle etc. are so much more suited to old world cuisines, even chips are better with mayo as any Belgian would tell you. And they invented the stuff, so they should know

      I remember an embarrassing time years ago when I and an acquaintance went to a steak house for dinner. He ordered an expensive cut and when the waiter brought it, he asked for ketchup. The look on the waiter's face said it all.

    As a child I ate everything with ketchup.
    On vacation at an all-inclusive resort I had macaroni with ketchup every day.
    My grandparents broadened my mind eventually, when we went hiking in the Polish mountains for a month and there was no ketchup.

    Don't buy those heinz ice cream kits, basically £15 and all you get is a container, an ice cream scoop and a recipe inside of a box. Have to buy the ingredients yourself. Watch the ashens salad cream video.

    According to my lovely parents, when I was the age of 3 on holiday in a posh hotel in the Isle of Wight, I asked for ketchup on my cornflakes. Sadly this gourmet request was denied.

    Ketchup is the Devils condiment. NO ONE over 10yrs old should EVER use just plain Ketchup on food, in a recipe is one thing, doesn't belong on a Dog/Sausage, Burger, or chips/fries.

    Brown sauce is basically tomato ketchup with 2 main added ingredients: Molasses and tamarind paste. These are the components which make it brown and change the flavour. Molasses add the taste of dark brown sugar, tamarind adds a slightly exotic fruitiness.
    Neither tomato ketchup or brown sauce belong on roast dinners though, nor on fish, with a couple of exceptions: Ketchup is just about ok with fish fingers, and brown sauce goes amazingly well with smoked mackerel fillets.

    Tomato ketchup to dip fries in(I know, chips) and as a base for homemade bbq sauce.That's it.
    Ketchup on roast chicken sounds down right gross.

    I don't ever have gravy on a roast dinner. My roast consists of roast potatoes, Yorkshires, peas, raw carrots chicken or turkey and salad cream!

    When I was young, I used ketchup to mask flavours I didn't like. I'd smother peas in it and swallow them without chewing.
    Now, I don't eat ketchup on anything. And I love peas.

Acidity is the name of vinegar's game, and lemon too, I don't know why you think ketchup is needed for acidity. Fish and chips isn't meant to be a sweet dish, not everything has to be sweet. You can theorycraft all day, fish and chips with salt and vinegar is a time honoured classic for a reason.

      @@SimonWoodburyForget Tomato ketchup is sweet. There is a difference between having some basic degree of sweetness, and being sweet. The sweetness is exactly why I wouldn't put ketchup on a nice bit of fish and chips. But that's just a preference because I (and I think most other people) aren't looking for their fish and chips to be sweet. However on a more objective note Ketchup has a very strong taste, it (like many sauces) was often used to mask the flavour of substandard meats during times of need, a nice piece of battered cod is a relatively mild tasting, delicate piece of fish. You dollop ketchup on a properly made fish and chips and you've ruined it. You might as well be eating fish fingers at that point, the ketchup is the dominating flavour.
      You can talk as if you have some special knowledge and that everybody doesn't already know the things you just said, you're failing to grapple with the actual point that putting ketchup on fish and chips fish is not something that people generally do, and not something serious foodies do. Again, I'm not even saying you can't have ketchup with fish and chips, but more of a side to the chips (a thin layer on the end of a chip with a mouthful of fish makes it far less overpowering).

    Turkey is only dry when over cooked, she needs to visit the USA. Ketchup on roast beef is a crime, in the USA only school kids put ketchup on fish. Rachael is a immature (maybe a tad crazy) person, who never grew up .

      There's juice in bread sauce, it's milk, flavoured with an onion and some cloves. Having said that, although it is traditional at Christmas, probably some old way of dealing with stale bread, I can't really see the point of it.

    With regards to James' argument at 2:30, here in the States we have something called creamed corn in which you do put sugar and milk (and cream) on corn kernels and its f-ing delicious, especially with brisket thats been smoked for 14 hours.

    Never mind the discussion, I'm more interested in the fact that James has a "Kiki's Delivery Service" (classic Japanese anime film from Studio Ghibli. Great movie btw) picture in the background! I wanna know more about this! Also, his Mount Fuji (Japan's famous mountain) shirt, which also has "Suzuki" written in Japanese katakana above it. Yes, I'm into Japan stuff.
