Delicious Stir Fried Eggplant with Garlic Sauce | Easy Chinese Recipe

- Ever since I learned how to cook eggplant, I am a lot happier about eating more veggie-centric meals involving eggplant. Eggplant is so filling and satisfying yet they are so healthy. In Western cooking, eggplant parmesan is another great recipe that involves eggplant. In Asia, stir fried eggplant is the most prominent way of cooking them. Different countries have somewhat different stir fry recipes although they are similar with respect to soy sauce-based flavors. Today's recipe is specifically Chinese. This recipe is also called eggplant with garlic sauce but garlic is less of a significant component especially in the sauce. However, this eggplant dish has a perfect balance of tangy, savory, and juicy flavors and texture it's wonderful. The recipe is super easy for any home cooks too. For vegans, just replace the oyster sauce with mushroom sauce as it's very close to tasting like oyster sauce with all the umami flavors you can still get from it. This eggplant dish is seriously the best.

Hi there new subscriber here from.TEXAS USA
Yummy, new subscriber.
Yummy at least english this recipe
Thank you so much please contenue.
VERY NICE INDEED!! JOB WELL DONE..
1. Some eggplant are a little bit bitter. The salt draws ALL bitterness out. I lay the cut eggplant on a tray and salt generously. After they have 'sweated' for a half hour, I rinse them thoroughly, squeeze, and then pat them dry before adding the cornstarch. 2. It's really easy to peel ginger with a spoon; the skin is not tough. I love eggplant and your recipe looks delicious. Thank you.
Is adding vinegar right?
That’s how do it too. I’ve learned it from my mom.
Yummy tasty ❤❤
That's delicious to pair with fried pampano or fried chicken!!!
I've made this twice. Just delicous. The second time I cut up a red bell pepper to give the dish a little more substance.
Dear Friend: I love this, as well as many other Cantonese, Chinese and Asian recipes in general. However, I can't have too much "heat" in my dishes. Can you please tell me if I can omit the chili peppers and let me know how "hot" is the Spicy Bean Paste? Perhaps if too hot, I could use a little less? Thank you for your reply! Love your recipes!!!
I substitute some matchstick cut carrot. Provides some nice color, yet acceptable for people who dislike peppers as does my daughter. This will not change the essential flavor.
New subribers thanks for sharing
Do you have a recipe for this dish with ground pork and tofu added? I used to work at a Cantonese restaurant where they made this for the employees. I would love to make it. BTW, I just subscribed to your channel. Your explanations are so easy to understand. Keep up the great work and thank you so much for sharing.
Very nice! The sauce should perhaps have 1tsp cornflour added as well?
Will try u recipe out Shireen South Africa thank you thank u very much
Yummy dish which actually resembles what they serve at P.F.Chang’s Restaurant. One question though, is Oyster sauce vegan?
No, but mushroom sauce can be a good substitute & there are other vegetarian 'oyster' sauces out there on the market.
I love eggplant anyway it’s cooked this way it tasty but lots of salt for me
👍🏻👍🏻👍🏻
😍😍😍 que rico 😍😍😍
Thanks
what particular wok do you use and where to buy it? thanks
In the Philippines we call that adobong Talong...Try Binagoongang Talong promise you will not regret it.Its a combination of eggplant 🍆 pork and shrimp 🦐 paste(bagoong).
Lol
2 Chinese eggplants cut 4 inch long and half inch fat
Keep in salt water for half
hrs[ 1 or 2 tbl spoon salt and fill up the bowl with water and keep there ]
After half hrs over no need to wash just drain in and add following components
1 and half teaspoon of corn starch and mix evenly
Afterwards heat up wok in high heat with whatever oil you like with eggplant
When wok is heated turn heat to medium and put eggplants
The goal here is mostly to get that caramelised ish texture so we gotta cook it like 90 percent
Fry on High Mid heat for a min and after min get a lid and take down heat to low medium and keep covered
And make sure to take off the lid every 20-30 secs to stir the Veggie to make sure they not sticking as you know eggplants love to stick to the bottom
Anyhow after 4 mins you should find your eggplants skin nicely charred and overall 90% cooked
And set it to a bowl or dish to let it rest and use later
And now the aromatics
Chop 5-7 or more cloves of standard sized garlic cloves, depending on your interest of garlic you may reduce or increase the clove amount
Get like a Ginger that's like 3 inch tall and 2 inch thick and finely chop it
Now Pepper, Get 4 inch fresh red chillies and cut it in stringlike fashion, red is important
And chop up some green onions for garnish, garnish comes at last so just keep it prepped
Now the important part, yhe stir fry sauce
2 tbsp of sodium Soy sauce
1 tbsp of Dark Soy sauce
1 or 2 tbsp of oyster sauce
2 tbsp of black vinegar
2 tbsp of brown sugar
And try to find spicy bean paste it's an unusual thing but you nay find it. If you can't find any it's fine
3 tbsp water
And now stir it in the bowl real good
Now the finale
Heat up wok to medium heat and add finely chopped ginger and garlic and proceed to give it all a nice stir for about 30 secs
And after 39 secs add red chillies and after stirring for 10 secs get the previously almost cooked EGGPLANT that you set aside
Stir it all for 20 ish secs to get the aromatics in your eggplant
After 20 secs add that sauce mix from before
Now keep stirring it till you are happy with sauce consistency
But cook it for at least 3 to 4 mins and stir it every 20 secs
turn off the heat when you are happy with the consistency and add the green onion garnish
And voilà, you have attained Chinese garlic eggplant stirred something
And here's something you can copy on your clipboard
LOVE YOU!!!! Thank you, Thank you, Thank you!!! :D
🤤
if you put tofu ❤wow ❤
🤤😋👌👍👏
I love eggplant
👍👍👍👍👍
What’s the name of the cooking pan that you use?
Are u asking about the brand or that cooking pan? It’s called wok
The brand of the wok please
I mostly approve.
Adding some minced meat makes this recipe more yummy
Yes. I had once in a restaurant with minced chicken.
Want to try it any substitute for shaoxing wine and dobanjang?
You can leave out both without harming the dish. I usually substitute a dash of white vermouth for the wine. I have the bean paste but if you don't have it, just leave it out.
What can replace cornstarch/cornflour? Regular flour doesn’t work?
