How To Make Potlakaya Perugu Pacchadi || Family Recipes || Infinity Platter || 2022

- So many of my friends have asked me for this recipe so here you go 😁
Potlakaya Perugu Pacchadi
Ingredients-
300g Potlakayas
1 Medium Onion
1/2 tsp Sonti or dry ginger powder
2 Green Chillies
4-5 Garlic pods
1/2 tsp Rock Salt
1/2 tsp Jeera or cumin seeds
1/2 tsp Mustard seeds
1.5-2 cups of Yoghurt
Popu or Oil garnish
4- 5 tbsp vegetable oil
3 dry red chillies
3-4 smashed garlic pods
1/2 tsp jeera or cumin seeds
1/2 mustard seeds
1 small bunch of curry leaves
1/4 tsp turmeric powder
Instructions
- Start by scraping the skin off of 300g of Potlakaya. You can do this directly with the knife.
- Wash them and cut them into 2 inch pieces.
- To some boiling water, add salt and add the Potlakaya. Boil this for 10-15 minutes. Once the Potlakaya boils, drain the water and squeeze all the excess liquid.
- Chop one medium sized onion and directly into your serving dish.
- To the onions, add 1/2 tsp of sonti or dry ginger powder.
- Finely chop 2 green chillies, 4 garlic pods and add them to a pestle and mortar. Into the same mixture add 1/2 tsp of rock salt, 1/2 tsp of Jeera or cumin seeds, 1/2 tsp of mustard seeds and grind everything into a fine paste.
- Add the paste to the onions and then add 1.5 - 2 cups of fresh curd or yoghurt.
- Add the boiled potlakaya to the bowl and mix well. Do not overmix.
- For the popu or oil garnish, in a small round pan, add 4-5 tbsp of any vegetable oil. Once the oil is hot, add 3 dried red chilies, 4-5 smashed garlic pods, 1/2 tsp Jeera or Cumin seeds, 1/2 tsp mustard seeds and a small bunch of curry leaves.
- Stir for 5-10 seconds or until they turn slightly brown. Be careful as this can burn very quickly.
- Add directly into the yoghurt mixture and mix well.
- In the same round pan, add 1/4 tsp turmeric, add a little yoghurt to it so it mixes well and add it back into the bowl.
- Mix well and it’s ready! You will love this recipe. Enjoy!

All good. Just one important comment. Instead of boiling Pottal kai in water and throwing the nutrition laden water away; sautee in very little oil, sprinkle little water and cover. After a minute or so the Pottal Kai will be soft and ready for the pacchadi.

I'm from Karimnagar, ppp (potlakay perugu pachadi) is not limited to Guntur or Gudiwada. we use minimum 2 kg creamy curd to make it during Vinayaka chavithi and throughout monsoon season with local potlakay.

Hi...small advice.....do the thadaka in the ghee...and put the vegetable in the ghee for few seconds....then add the whole thing into the curd.i am sure u will love it more.....

First of all congratulations on this successful channel with wonderful recipes. I have been a hardcore fan of Venky garu from his very first movie. About your recipe ... Just one suggestion.... Usually let tadka (popu) cool down a little bit before adding it to any curd items, otherwise it adds a little bitter taste to the recipe. You can notice it the next time you make it. Also I usually make very good roti pachadulu in my group, one tip I always follow is to let popu cool down a bit before adding it to the chutney, so dals (pappulu) in tadka will be crunchy till we eat.

We do this with ChowChow and Sorakaya too.. Tastes good. You should have also added some Grated coconut to it as a betterment. 🤤

Creamy curd, ghee, dry ginger, coriander leaves with local potlakay (don't use hybrid potlakay) is a heavenly combination and it's my family's favorite dish during monsoon, that's the season for potlakay.
You mean Ghee during tempering ( poppu) instead of oil ?? And how do we differentiate hybrid & natural ??
