1:06 - Not the best editing on that one. Another couple seconds would have shown him crawling out of the passenger side to safety.

So I don't know the 1st thing about NASCAR, but to me it seems like those cars catch on fire disproportionately often.
Is it because of the way they are build?
Is it because they are going full speed almost the entire time and that stresses out the engine too much?
It can't really be the breaks can it now? Compared to DTM or Formula, these guys are basically not breaking at all!
Or maybe there are just so many more NASCAR-races compared to other motorsport-leagues(?)

Not really. These clips are from various decades. You can see how most are from before 2010 just from the quality of video. Cars have gotten way more reliable now so that there aren't really many engine fires. The fuel cell has been toughened up and so has the bladder inside of it.
We haven't had a Grosjean sized fire either, at least not with a driver in the car (Juan Pablo hitting the jet dryer was about as big as that but his car rolled away before the jet engine caught fire)
