    I'm so thankful for our garden this year. I was laid off on my birthday two days ago while my wife and I were having a birthday meal (on vacation). So glad we already had all of our seeds, our year plus of food storage, and the fact that we've made things from scratch our entire marriage.

      I think I just need to vent because the last few months have been an emotional rollercoaster. My husband was laid off just before Thanksgiving. Weeks after I (after 6 years of searching) got a definitive diagnosis with chronic illness. His job was so soul crushing we were both relieved and felt strangely peaceful. He thought it would be weeks, I had what I now know was a spiritual prompting it would be months.
      Companies have been interesting, but they're all hiring so...slow..... Just for 1 company it was like a month of interviews, 2 months of paperwork on their end to actually start working. We're not as self sufficient as the seasonal homestead, but we had a fantastic amount of food storage (we're still ok on that end) and our financial savings is only now near it's breaking point. We're thankful that if someone had to loose their job, at least it was us who aren't living pay check to pay check. It's just hard because Christmas and 4 of our 5 birthdays, no income, and we do have a mortgage to pay. I'm so thankful for our ward and our families. They've helped us a lot, and we were blessed to not need to make a storehouse order. It's also just been difficult because I'm used to being more self sufficient and we've really had to rely on others. I should feel relief that it's almost over, but I don't yet, though I did admittedly feel completely at peace going to the temple last week. And on the plus side it's kind of what my husband calls "failing upwards" because all the companies who have been interviewing him have better offers then his old job, and even though he's starting this job because we have to have at least 1 pay check asap, we're actually juggling another offer as well (the first company is aware, its just several months before the other company will hire). So no matter what happens, it should be better for our family in the long run financially and mentally. It's just a waiting game I want to cry to be over.

    Ok the crackles kept from lard rendering can be fried crispy adding raw cubed potatoes and served as a breakfast. It's so yummy. It's from our Mennonite traditions.

      I would just drain as much lard from it as possible. Frying it very crispy is the key

    my mom used to do this and she always saved the bits to make cabbage stew. it was an absolutely magnificent stew! i could never remake it without those lard bits! tho it was easier to push the fat through meat grinder, then process

    From experience I would keep compost bays away from the house as rodents like to get in it. Also adding lime helps activate compost

    I rendered lard for the first time last Fall. I used a Nesco and let it do all the work. I used a few cracklings in scrambled eggs. Not too bad. I used pint jars for lard torage and put them in a refrig that's close to 32F. I am so thankful the butcher ground the fat for me. It's a family business and he said that his mom would really yell at him if he didn't grind the fat for their lady customers. 😂

    I had dabbled with cover crops in the past with varying success, largely because I didn't understand what would winter kill, what needed to be cut down, etc, when to do that all. I finally got a handle on it this fall and winter. I was just out prepping a bed and cannot believe how much even a single cycle of cover cropping improved the soil.

    If Cam has a Blowtorch, burning/blackening the raw inside parts of wood in the compost bin helps to keep the wood from rotting as fast as raw wood. I would only do that if you pick the frame up and move it away from the house.

    When planting onions have your husband make a onion planter
    Half or 3 quarter plywood take some old broom handles an cut to inch or inch an a half screw on bottom to your desired width an length mine are 5 inches apart
    I put an old wooden adge handle 3 foot tall set on row walk down it leaves holes keep going kids could drop in onions goes really fast an saves back your not getting younger 😊

      We have something super similar to this for our Garlic. Maybe we need to adapt an "onion plate" for the bottom that aligns with the onion spacing/depth :)

    I was outside in the garden yesterday. But mother nature decided to snow today. I was turning in aged manure that I added last fall. I noticed I had strawberry runners that escaped their bed. I'll be moving them back into their bed, or expanding the bed. My grandchildren love to eat up all of the strawberries. I've been thinking of trying to make lard. I'll see if I can get some.       I might expand the strawberry bed. Otherwise I won't get any for the freeze dryer. But the grandchildren are worth it. It fills my heart with love when they come over to harvest all their favorite veggies and fruits. My oldest granddaughter said she will finally help me. I said I'd pay her. She liked that idea.

    The garage storage shelving looks great. I must admit, my heart skipped a beat seeing you up on that ladder. I’ve been moving away from hydrogenating shortening in my baking towards using only butter and lard. I bought leaf lard and wasn’t too impressed with that pork flavor in my pie crust. Another great video!

      I wonder if tallow would work the same way. When I have used tallow in my cooking it hasn’t imparted any beef flavor

      Leaf lard shouldn't really have any pork for in it so perhaps it wasn't rendered correctly or it was just the regular lard

    Hi, did you guys buy your tractor and accessories or did you borrow/rent one?
    We bought 22 acres last year and want to work the land but are trying to decide whether we should and how much we should invest in our equipment when we're trying to get started.

      We had a couple of implements that came with the tractor since it was used. All others we have been able to borrow from friends!

I realize your videos are about your love of growing everything but do you ever just relax? From your videos you seem to "work" from dawn to dark. Just curious.     I’m super confused about the compost bin so close to the house, first off they are prone to spontaneously catching on fire, 2nd composting smells like hot garbage. I’m not sure the convenience would be worth it to me esp right off my back porch and under a window.

      @@katehache they certainly can, I don’t know what your chicken run is made of or how, I personally wouldn’t put it near structures, people do, we all have different risk comfort levels.

      @@katehache A compost pile catching fire is incredibly rare. And if compost is done right should never happen. I wouldn’t worry about where your compost pile is 😊

    The butcher might not of ground it for you but I’ve never seen such meat cleaned fat from a butcher 😃 Your lard is not homogenized (makes it unhealthy!!) all store bought lard is homogenized!! Yours is beautiful👍🏼🤩

      We LOOOOOVE the kidney fat from the butcher!! We always make sure to get every bit we can from the butcher. Best part is what we showed on the video is only 1/3 of our fat from this year. Yay!
