- Martha Stewart’s recipe for pineapple upside-down cake is extra special because it’s actually baked in individual ramekins that are each the perfect size for a single serving. A freshly-cut pineapple round is sandwiched in between a super light, fluffy cake and a delicious sugary base. When they come out of the oven, simply flip the ramekins upside down to reveal the most beautiful golden cakes, and then drizzle with a dazzling caramel-rum sauce.

I like the canned pineapple because I use the juice instead of the milk and it gives the cake a pineapple flavor as well we also put cherries in the center of each pineapple

i make it like that too. I also pour a little of the cherry juice over the cherry to give the cake a flame color.
One thing is for sure- you never disappoint Martha- even after all these years.
You really set the pace for the rest of the girls who followed behind you.
These are sooo good. I made a half batch because I only needed 3 and they turned out just perfect. The fresh pineapple is so much better than canned. Martha did it again!

My Irish grandmother made pineapple upside down cake, putting maraschino cherries in the center. As an orphan abused by her caregivers, she told her mother's friend, who told her to gather her things together and wait by the road before dawn. Her brother, Ted, came on horseback, taking her to a convent boarding school in Portland, OR. Her manners were as elegant as Grace Kelly's. She dressed like a movie star. She was an executive secretary for a major oil company. They gave her $75 month, just to keep up appearances in the 50s. That would be close to $900 mo now. She drove jazzy sports cars. She told me her life story when I stayed with her. One fresh coconut cake disappeared while she went to the store. She found the cake plate washed, dried, and put away. My Dad and my aunt's brother, ate the whole thing after she left. Her stories we're very sad, or very funny, and cheerful. She went from rags to riches, on her own. We called her Mimi! She was told she had French blood also!

I remember my mother making this, but I never thought of making it in ramekins. I'm going to try with the rum sauce. Also, I found my my mother's recipe box and made her cabbage rolls. Her recipe was exactly like Big Martha's. Let's bring back the old recipes!
This is my Pop's favourite cake, he's spent years perfecting his recipe. I have to admit, his cake is incredible! he really goes all out, and I would put his cake up against Martha's any day of the week with confidence. That, however, is the only kitchen expertise he has. I showed him this, he's sulking because he never thought of Martha's idea of making this really low-brow cake fancier by serving it in individual cakes like this. So, he's stealing the idea. Now he's asking me to "get on Twitter and tell Martha he's challenging her to a bake-off".

He doesn't even want cameras or attention, he just wants the personal victory. I'm team Martha all the way, except on this one dessert. Where is the cherry 🍒 that goes in the center of the pineapple hole? My Mother never dressed her pineapple upside down cake with nothing more than those cherries. Martha’s Sauce is interesting and decadent but, a good vanilla ice cream 🍨 is so awesome with this cake.

OMG!!! I've tried other pineapple upsidedown cakes & none level up to this one. I didn't have ramekins, so I used small cake tins. I was fasting thus I wait a few hours till i opened my fast with it. Absolutely delicious 💯 Alhumdulillah 💕

Upside Down Pineapple Cake Recipe
Caramel:
1/2 cup brown sugar
8tbsp (1/2 cup) room temp butter
Pinch of salt
Batter:
1 cup sugar
1 stick of butter (1/2 cup)
I vanilla bean
2 whole eggs
1 & 3/4 cups cake flour (substitute: take out 2 tbsp of flour from one cup of all purpose flour & add in two tablespoons of cornstarch or arrowroot powder)
3/4 tsp baking powder
1/2 tsp salt
2/3 cups room temp whole milk
Preheat oven to 350° for 30-35 min or until toothpicks comes out clean

I think, if you want the juice of the real pineapple juice, you can blend some chunk of pineapple then you'll have the juice
