Japanese family owned fish-based ramen shop in Shinjuku Tokyo. A look behind the counter and into the kitchen of this local family-owned Japanese restaurant, Menya Kaijin, the #1 fish based ramen shop in Shinjuku Tokyo, a highly competitive area in the ramen industry but this mom & pop shop has found to always appear in the top rankings with their beautiful umami infused clear soup. Luckily, the shop is located only a few minutes walk from the JR Shinjuku station South East exit. Endo san, the shop manager, gives us a tour of his ramen kitchen and shows us how he prepares his delicious fish ramen. Hope you enjoy this behind the counter video at one of the best ramen shops in tokyo for it's fish base ramen.

So cool
Sooo many awesome choices!! thank you🙏
Merry Christmas to you and your family I hope you will stay safe and warm!
Thanks for another awesome video. Please can you make a "Day in the life of a" Pro J league footballer, Sushi Chef or train driver? Thanks ❤🇿🇦🤗
Hello from Canada Paolo! Suggestion: Do a video of most flavourful healthy dishes in Japan. I've noticed a lot of your food based videos have very rich foods, but maybe do a video of dishes that are very healthy but don't skimp on flavour. Just a thought. Love u brother, be well. Oh and Merry Christmas! :)
I was expecting the mother to be strict and serious, but she seems like a very lively and sweet mother
Not everything is like in anime LOL
Me too , shes so sweet
@@arbias8518 who said anything about anime lol I expected her to be strict/serious too. She made her son give up a pharmacy job and makes him clock in with a time card lmao
I thought so too the whole punch card thing like damn
@@aleks-33 bruh there is a possibility that during covid her mother was afraid of his pharmacy job and maybe she too needed help in the shop during this pandemic situation.

@@bluebutterfly7233 I haven't seen him much. *Happy New Years! Love from a small CZcamsr!* ♥
Well, he's living in Tokyo making CZcams-videos from ramen shops. How couldn't he be happy? :)
Agreed!! 😊
So happy it makes me cringe (a little)... he is a bit, how shall we say it, ..."more than happy"... something I consider a condition that may need looking into
@@kurtn4819 huh?
I laughed so hard when he asked his previous job lol. Paolo was like “Pharmacist to Ramen how that related?”
Usually our hobbies are very different from our jobs and I guess this man proved it too.
yup, I can relate to him. I switched career from what I graduated from. It's pretty nice doing something now I like and enjoying
I went from an art college graduate in Tokyo, to working in supermarket, and customer service in a mall, but now I'm working as a fabric designer and illustrator.........you know sometimes you got to do other things before you go back to your life calling/passion/whatever you call it. @@tsukuneboy yup, I'm an art graduate too and worked in few corporate jobs after graduating. Can't say I love the work but the people I've met and most importantly experiencing life outside of your comfort zone helps you grow as a person. I have been going to this ramen shop & can vouch the ramen is really good. Thanks for this video. At least I know it’s still going strong
now i definitely need to check it out!! 🙏
I really wanna go to Japan one day and I love Ramen noodles never had restaurant Ramen but it always looks so good
How much cost a ramen in this place?
@@AndresUruguayo ranges from ¥800-¥1000 approximately
@@hillerychan9483 thanks!
The vibe of that place is so positive, eating a light ramen with soothing place is really a good combo.
Oh man, this was my go to spot back when I was in Tokyo, mainly because there's an arcade right beside it. So after a few hours of gaming I would grab a bowl of ramen before hitting the train to go home. Definitely miss Japan, my few years of living there were some of the most memorable moments of my life. I'll be back in the future for sure.
Why did you leave a place like japan in the first place :(
Was it because of the work life balance?
What were you doing in Japan?
@@nausheensiddiqui8745 I work in Japan. Depending on your profession, work/life balance in Japan is not that bad anymore in my opinion. A lot of the companies have strict no overtime policies. I work in IT and most IT companies got quite westernised in that regard. Even if I do overtime (in IT occassional overtime is a must no matter the country) I am generally off work at 18:00-18:30 which is not really that bad.
I moved to Japan from Korea where work life balance is completely non-existent. I know weeks where I arrived home at 23:30, got something to drink, watched one episode of anime and went to sleep to wake up super early to go back to work again. So after that Japan was like heaven to me.
And my home country (Turkey) turned out to have worse work/life balance by statistics which shocked me honestly as in there, Japan is known to work 24/7
@@nausheensiddiqui8745 Japan can be a difficult place to live for foreigners.
This has been my favourite "behind the counter" episode so far. What a wonderful family. I can't wait to visit their shop when I'm allowed back in the country :)
Ye me too. I had to cancel my trip at the end of last year.. 😞
Lies again? Mixed Fish
Wdym? Are you temporarily banned from Japan?
I'm always amazed by how Japanese are so contented, dedicated and happy with their work, even though it might be repetitive. Day in and day out for 4-5 years, I salute that lady employee.
umm most japanese are not like that. most of them hate their job and do it for the money, like 95% of the world.
Japan has one of the worst work cultures in the world. Go read up on the countless articles about it and realize life is more than just youtube highlights, you goober
lol u are seen only the people that are doing well ,I have seen countless of documentaries where they show the poor work ethic ,Japan and other east Asian countries have ,some of them kill themselves because of it ,a lot of people sleep 3-4 hours a day in office jobs .Therefore I’m sure that a lot of people hate their job in there like the rest of the world .
@@victorphonepyae i can relate. I wish for repetitive yet fulfilling work, instead of soul-draining 9-5 work.
"Because of the customers, I do my best." This is why you need to go to Japan to truly experience what this means.
I mean, she's being interviewed with her employers right there.
@@sunblock8717 yes, but they don't just say it like in western countries, they really mean it in Japan.
@@Jindujun Exactly. That is the difference between Asian countries and America.
Two places I visited so far where, when I returned home I would just be so disappointed with the service in contrast: Japan (the whole country) and New York City.
People working in the food service in these places knows their stuff. They can tell you what they have and match it with what you like but where I live they can't even tell me what are the cakes on display :(
They are very hard working. That's why everything is high quality there. *Happy New Years! Love from a small CZcamsr!* ♥
they're the nicest people i've seen on this show so far :)
YES!! I was thinking the same thing 🙏
I really love how the three of them are just laid back and happy but at the same time be able to cater to the customers efficiently. Thanks for this Paolo!
You can tell they enjoy what they do, and that's the most important thing about a job you do every day.
It was great to get a glimpse of what it is like behind the counter at a ramen shop.
This really brightens up my day as I'm working with irregular schedule to make ends meet

I love when he said " we have many customers who can't eat pork due to their religion" , and I am as a muslim this is one of ramen restaurant that I have to visit when I travel to Japan. I can eat that ramen without any hesitation, because in Islam we don't allow to eat pork.
I am not sure the ramen I had when I used to live in Tokyo wasn't made with pork. Thanks to your videos I learned that pork bones are used for the ramen soup, something we weren't aware of at the time!
It's nice to see a video about a restaurant in Tokyo that doesn't use pork as an ingredient. I would love to see more videos like these. My main issue when travelling abroad are meals taken at the restaurant. The choice is very limited for those who don't eat pork (meat, bones for the soup, ...).
Most Asian countries have homogeneous society and they know only one type of culture i.e their own. A large majority of people don't understand the concepts like vegetarians/vegans/religious restrictions etc., though the younger generation have some idea about it, but the previous generations don't. So their native food almost always contains pork/fish/beef meat/broth. So people with dietary restrictions should ALWAYS verify and not assume anything.
It's seems hard to visit Japan as a Muslim 😔
@@chummychimchim6734 not at all imho. Japanese mostly eat sea products
@@BambooExpat yes but I think they use Sake or white wine and such stuff in their dishes which is a no no

I'm a long time fan of Paolo's "day in the life" series, but this video is actually one of my favorite of Paolo's productions so far! The owners' energy just transmitted across the screen to me - just living the moment and enjoying the small things in life. love it!
i like how japanese people are allways positive about their work and they are very nonchalant about their day, they are very inspiring, in western culture people do their work with a sense of obligation they get depressive with the stressfull environment and quit very easily, from job to job without respecting their masters etc
Everyone had very positive vibes. I loved it. The mother was more positive than the other two.
their energy is through the roof i watched the whole vid with a smile in my face
Actually, both cooks and pharmacists deal with chemistry and need to follow the "recipes", so it`s actually not that different 😋 ha ha. Really, I've heard a long time ago that pharmacists tend to be good cooks, because they stick to the recipe and they are very precise. I know it's a generalization, but there must be something to this 🙂 Greetings! 😁
huh, such an interesting comment!! I need to think about this more:)
