Anti-Gravity Skittles Cake

Ingredients
Cake
2 sticks unsalted butter, softened
1 1/2 cups granulated sugar
4 eggs, room temperature
2 teaspoons vanilla extract
3 cups all purpose flour
2 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk, room temperature
1/3 cup lemon juice
1 teaspoon lemon extract
2-3 drops of yellow gel food coloring
Frosting
3 sticks unsalted butter, softened
5 cups confectioners’ sugar, sifted
1 tablespoon vanilla extract
1/4 teaspoon salt
3-6 tablespoons heavy cream, room temperature
2-3 drops of orange gel food coloring
Decoration
1 14 ounce bag of skittles
1 small bag of skittles
Cotton balls
1 balloon stick
Silver Metallic Edible Food Paint
1/2 cup of white chocolate
Preheat the oven to 350°F. Grease and flour 3 8-inch round cake pans (or you can use 6 inch pans).
In a large bowl with a handheld mixer or in the bowl of a stand mixer, beat the butter and sugar together until light and fluffy, 4-5 minutes.
Add the eggs, one at a time, mixing well after each addition.
Beat in the vanilla and lemon extract.
Combine the flour, baking powder, and salt in a medium bowl. Stir with a whisk and add it to the butter mixture followed by the milk. Beat on medium-low speed just until combined.
Stir in lemon juice
Add 2-3 drops of yellow gel food coloring and mix into batter
Evenly distribute batter into the prepared pans. Bake for 20-30 minutes or until a toothpick inserted into the center comes out with few moist crumbs attached (be sure not to overbake and start checking your cakes for doneness around the 15 minute mark).
Cool for 10 minutes. Remove from pans and cool completely on a wire rack.
Frosting
In the bowl of a stand mixer or a large mixing bowl with a handheld mixer, beat the butter on medium-high speed until creamy and pale in color, about 5 minutes.
Add half the confectioners’ sugar and beat on low speed just until the sugar has fully moistened, then turn the speed up to medium-high and beat until well incorporated, about 3-5 minutes.
Add the remaining confectioners’ sugar and beat on low speed just until the sugar has fully moistened, then turn the speed up to medium-high and beat until well incorporated, about 3-5 minutes.
Add the vanilla and salt and blend well.
Add 2-3 drops of orange gel food coloring and mix well.
Turn the mixer on low speed and slowly add heavy cream a tablespoon at a time. Turn the mixer up to medium-high and beat until the cream is well incorporated.
Check the consistency of the frosting and add more cream, 1 tablespoon at a time, if needed until frosting is spreadable but not too loose.
Frost your cooled cakes.
