    Hi, Anne Fang - You may substitute confectioners' sugar for regular white sugar (confectioners' sugar is really ground white sugar) in this recipe, but increase the amount to 1-3/4 cup confectioners' sugar for every 1 cup of granulated sugar. Good luck!

    Thanks for your question, Kalie Crain. You may use brown sugar in place of white sugar in this recipe. The sweetness level will be the same, and also the doneness test, although the cookies may be a little darker. Some home cooks even prefer brown sugar for these cookies. Happy baking!

    Hi, Fai B. - If you're reducing sugar in this recipe, we'd recommend starting by cutting 1/2 cup. Eliminating an entire cup will change the baking proportions for the other ingredients. Let us know how it works out.

    Just tried it and they are good. Changes made were I used one cup of sugar(next time I will use 1/2 cup, 2 cups is way too much), Almond extract, no salt. they are very good. next time I will put almonds in them. Thanks.

    Thank you for your question, Helen. Vanilla extract adds a wonderful flavor to baked goods, but is not necessary to make this recipe works. You can certainly leave it out - no worries!

      2 cups peanut butter chunky or smooth.
      1cup sugar
      2eggs beaten,one by one
      2tsp baking soda(i prefer using just1 tsp)
      Pinch of salt.
      1tsp vanilla extract.

    Made these for my daughter and we just loved it. I did only half of the recipe and I added one table spoon of butter and some flour just so that the cookie would have a little more harden consistency. It was just right for my palate. (not all palates would agree)

    Hi catherine, thanks for your question. You can omit the vanilla extract if you prefer. We wouldn't recommend omitting the baking soda, but you can substitute every 1/2 teaspoon with 2 teaspoons of double-acting baking powder if you have that on hand. Enjoy :)

    Thank you for your question. The weight of 1 cup of sugar will be different from the weight of 1 cup of peanut butter. 1 cup of sugar weighs about 200 grams. Because peanut butter is a lot heavier than sugar, 1 cup of peanut butter will weigh approximately 125 grams. Hope this answers your question. Happy baking!

    I made this a few weeks ago, and it came out SUPER sweet. I think 2 cups of sugar might be a little too much. I would try this recipe next time, but only using 1 1/2 cups of sugar and peanut butter might be good. But besides being too sweet, these cookies were actually pretty good!

    Peanut butter does make the cookie, Daniel Hill. We recommend using a brand that's 100% ground peanuts without a lot of salt and preservatives added. It means reading labels, but you'll find one you like. Maybe in the natural foods section of our grocery store?

      The best peanut butter cookies I ever had were made by my brother who ground freshly roasted peanuts. The only ingredient in the peanut butter was the peanuts. For sugar he used mostly white granulated sugar but he substituted a little bit of brown sugar and some honey. He also added just a touch of nutmeg, a very small touch of nutmeg.

      No, the eggs are what holds the cookie together.
      I should also say, these can be done at 325 for about 15 mins, maybe less - I like mine a little chewy, but if you prefer crunchy, bake a few minutes longer but keep an eye on 'em - nothing worse than black bottomed rock hard pb cookies.

      You need something to bind them together. You can use egg whites alone but you will need the whites from three eggs for this recipe. Traditionally, eggs are the only binding agent used by bakers. But, there are two others that I have heard of but never used. One thing that might work is if you mix whole milk and corn starch together in a sauce pan and heat. stir it constantly until it gets fairly thick. Use by volume about the same amount. Sometimes this works as a binding agent but it will change texture and flavor. Another one that I have never used but I have heard some bakers have had some success is unflavored gelatin. But you have to do this much differently. For this you would mix the gelatin in, instead of the eggs but instead of cooking on baking sheets you would have to bake them in cup cake pans. Then you would have to put them in the fridge to chill. Don't take them out of the cup cake pans until they chill. These will also have a different texture and probably a different cooking time.

    Made these with 1 cup of light brown sugar, 1/4th vegetable shortening or butter, a table spoon of vanilla extract, and a teaspoon of nutmeg and they are so much more flavourful and soft, cooked at 350 degrees for 10 mins, if the dough is too wet, scoop it onto a baking tray and use wet(not dripping wet) hands to press down and slightly shape the cookies

    Hi Dina, this recipe makes 3 dozen cookies. You could use about 1/2 cup more of peanut butter if you prefer!

    Javier, thank you for your question. You could use baking powder instead of baking soda. Baking powder has salt added to it, so you'd want to cut down on the salt in this recipe. Also, you would want to double the amount of baking powder. Happy baking!

    This is a nice recipe I used it today and they turned out great but I went free hand on the baking soda and salt haha and used Wal-mart's brand of peanut butter and peter pan I think and it was delicious. I think it's important to refrigerate the dough for an hour though before prepping them for the oven. Just a heads up!

    Thanks for your questions. Leaveners - such as baking soda and baking powder are critical for making cakes and cookies rise. If you don't have baking soda, the general rule of thumb is that you can substitute it for 3 times the baking powder. Hope that helps!

    Delicious question, Rainbow Crafter! But Nutella has a lot more sugar in it than peanut butter, so using it for these cookies isn't going to be successful unless you cut back on the amount used, plus add flour to hold the ingredients together. You will have to experiment to get the right proportions.       You may substitute honey, agave or stevia for the granulated sugar, badillaboy, but add anything in small amounts to reach the level of sweetness you prefer. Honey, especially, is a lot sweeter than sugar. If you want to avoid wheat flour, look for a commercial gluten-free blend, or make your own using a mix of rice, barley or oat flours.

    Hi Deb, so sorry this recipe didn't turn out well for you. Did you stir the peanut butter prior to measuring? Sometimes naturally occurring oil can build up toward the top, causing excess liquid. Also, be sure to cool them slightly on the pan before removing them to the cooling rack. Perhaps give this one another try!

    I baked them earlier with 1/2 cup of sugar for 1 cup of unsweetened peanut butter with a little bit of honey and maybe 2 full spoons of regular peanut butter with sugar and salt, it was already way too sweet for my taste. If you are gonna try this, know that the amount of sugar they ask gonna make your cookiers extremely sweet. I live in a very hot country so as my dough was a little liquid I also added about 1 spoon of all purpose flour and about 2 spoons of peanut flour. Although I changed the recipe mines were very delicious and everybody liked them. Make small balls...big ones gonna make them break easily. Thanks for the recipe.

    I love making peanut butter cookies. I used Splenda and Skippy peanut butter reduced fat.
