Your food is always gorgeous! All the colours in the gratin and the little sprig of garnish on top is so pretty. This is the difference between a cook and a true chef.

in this very moment, it is in the oven. i eat quinoa often but i have never made it this way. after sauteeing it with the carrots, it smelled so good and it tasted soooo delicious!!! This is a very easy dish to make and in about a less than an hour, i will know how I did and how it turned out! :) thanks for such an easy delicious recipe!

It was so friggin good! Personally, I strongly suggest everyone roast the eggplant and tomatoes because the flavour profile is improved exponentially! Also, the toasting of the quinoa is SO important! It completely changed its flavour! Toasty and nutty. Will add this recipe to my repertoire!
Thank you for your suggestion. I roasted the eggplant and tomatoes with thyme and olive oil, and toasted the quinoa. The result was incredible combination of texture and flavor. This recipe is a keeper.
@@ommaya1336My pleasure! I'm sure if you microwave it, it would taste fine, but roasting.... it's just magical. I made this a second time, and I used roasted red bell peppers and leek to go along with the eggplant and tomatoes! Amazing! I feel that this recipe lends itself very well go modifications!

I would like to try making this with couscous.. Instead of quinoua. I think that could work! Couscous is lower in carbs than quinoua.
