âAvoid liquids with fats in themâ But whipped cream is made with heavy whipping cream... high fat. So Versawhip replaces the fat content. So if you have a high fat liquid, just whip it without the additive.
Yeah I was gonna say I thought it was nitrous oxide's solubility in lipids (fats) that made it able to dissolve into and expand the cream.

In theory this works. However, natural whipped cream does not actually whip up super well. In North America, the majority of heavy cream (35% fat) will include some sort of emulsifier in it. Most commonly carrageenan.

Anything over an inch thick is going to be harder to freeze dry. And there's a limit of about 1.5 inches between the trays and the top of the rack for the heater shelf inside the freeze dryer

Ya'll really need to use parchment paper or silicone mats when you freeze dry. Stuff will just pop off rather than you trying to scrape bits up off the metal pans

Calli, if you love ginger ale try making a lemon sorbet and ginger ale float. It works the best with the ones that have a strong ginger bite to them.
