💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Hi guys! I work as a chef and baker...here's a pro tip about working with parchment on trays. If you put a little dot of shortening on the corners of the tray the parchment will stick to the tray and won't move around while you're working. Love the channel, and thank you Steve for teaching us a little more about chocolate. I've picked up quite a few tricks by watching and use it in my own work. Have fun!

You know what would be a great thing? What if Hercules Candy offered Chocolate and Candy Making classes for people who want to either make it at home or start their own candy business? I'd think there would be a lot of interest in that.
I think there would be too, but we have a hard enough time keeping our head above water as it is 😂
I needed this video about 9 years ago. My brother in law and I made chocolate covered drunken cherries for my in laws 50th wedding anniversary.
I wonder if Steve found it weird to make chocolate treats in his old kitchen. It was so nice to see the place again. Like old times, but different. Made me nostalgic. Hugs to all from Australia xx
The secret is to use a bowl that won't touch the water in the pot. Then it won't get as hot
With a double boiler set up the bottom of the pot should never touch the water in the pot below. This way the chocolate is being slowly melted by steam instead of boiling water, thus it doesn’t over heat.

I adore chocolate covered pretzels. I have found that using inexpensive wood skewers works like a dream instead of forks.
This is the same method, minus the thermometer, that I used to use when I did chocolate wedding mints for my mom's cake business when she had it 20+years ago.

Thank you for showing this video. My mom used to temper chocolate and create chocolate boxes for gifts at Christmas time and she also won ribbons at our local fair on her chocolate. She used gloves and a chocolate puddle like you do.

I've never even thought to check the temperature when using a mold. I guess I got lucky. It always came out fine! I learn a lot here.

You can purchase candy "dipping tools" at most craft stores, (Hobby Lobby/Michael's, usually Wilton brand) for dipping things like the pretzels in the chocolate...much less messy and doesn't waste much chocolate. I've been using these for years to make "buckeyes", or as my family calls them, chocolate covered peanut butter balls. Love your videos!! Fascinating!!
When I was a kid, Saturday night was chocolate night at our house. We made homemade fudge. We also made chocolate chip cookies and/or chocolate pie. The pie recipe was from my grandmother's 1906 Watkins cookbook...the best I've ever had!
The chocolate company I worked for didn't have double boilers, but it had a cabinet that looked like a freezer, but it had hot lamps underneath the chocolate bowls. It was wonderful because the chocolate could melt overnight and be beautifully tempered the next day.

When I do my pretzels I use a pair of cheap toast tongs ( they're narrow at the tip)or the plastic ice grabber things they have at the dollar tree. Chop sticks work good too, I just pick the pretzel up by a loop and shake a little.

Suggest using binder clips. Cut parchment so there is paper over the baking pan. Then secure with a few clips. Works great!

Great video! Sure would have been nice to this technology back in the late 70s! I learned by trial and error method. BTW surprised to didn't talk much about water and chocolate! Rookies may not know what a disaster that can be. When using a make shift double boiler, one must be careful to make sure non gets in the bowl. 😁

I was lazy and did half chips. I took all the best chips in the bag and just half-dipped them and shook it off. It worked out nicely because you could taste the salt better and it was a nice chip-to-chocolate ratio. Kinda looked cool too... half chip, half chocolate.
They do look nice that way. We cover the entire chip to protect from the exposed chip getting stale. Chocolate as a preservative 😋

Chocolate pretzel potato chip bark could be a great seller. I didnt think of that
When doing the double-boiler method, the bowl should not touch the water at all and the water should only be simmering slightly, not boiling. You are utilizing the steam between the water and the bowl to melt your chocolate.
Thank you for the demo. It made me much less scared about working with chocolate.
