    Ingredients:
    For the Lamb Rack:
    rack of lamb
    2 tablespoons olive oil
    2-3cloves garlic, crushed
    fresh rosemary
    fresh thyme (optional)
    Salt and pepper to taste
    1 cup pistachios, shelled and finely chopped
    2 tablespoons Dijon mustard
    Instructions:
    Prepare the Lamb Rack:
    Clean the bones.
    Preheat your oven to (200°C).
    Sear the Lamb: Heat a large oven-safe skillet over medium-high heat. Sear the lamb rack on all sides until browned, about 2-3 minutes per side.
    Remove from heat.
    Prepare the Pistachio Crust: In a bowl, mix the finely chopped pistachios .
    Brush the seared lamb rack with Dijon mustard, then press the pistachio mixture onto the mustard-coated lamb to form a crust.
    Roast the Lamb: Place the lamb rack in the preheated oven and roast for about 10-15 minutes for medium-rare, or until the internal temperature reaches your desired level of doneness.
    Let it rest for 10 minutes before slicing.
    Serve:
    Plate the Dish: Slice the lamb rack into individual chops.
    Garnish with fresh herbs if desired.
