🥩 CHARCOAL GRILL PAN SEARED STEAKS
(NOTE: you can do this on a stovetop or gas grill if you don't want to use a charcoal grill. Just follow the same steps)
    1 steak
    2 tbsp olive oil
    2 tbsp butter
First things first. Take the steak out of it's packaging and remove any moisture on the steak by patting it dry with a paper towel. Now it's time to season the steak. You can use your favorite rub or seasoning - if you aren't sure, we recommend a blend of salt, peppper, and garlic. Once you have both sides of the steak seasoned, place the steak in the fridge until it is time to cook.
If using a charcoal grill, fill a starter chimney full of charcoal and light. When the charcoal is ready, dump it into the grill and arrange the charcoal as best you can to the approx size of your cast iron pan or griddle. Place your cast iron pan on the grill grate directly above the coals. Add 2 tbsp olive oil and cover the pan.
When the oil begins to smoke, that's your cue to start the steak! Place the steak carefully in the pan and cook in the oil, flipping every 30 seconds or so until both sides are well browned.
Then add 2 tbsp butter and continue to cook the steak, flipping every 30 seconds, until the steak has reads about 10 degrees less than your target temp for the steak. At that time, remove the steak from the pan and tent with foil. Let it rest for 10 minutes. Slice, serve, and enjoy!

It's been a long time since I've cooked a steak in a cast iron skillet. That looks delicious and going to have to do it again real soon.

I’m getting ready to use a charcoal grill (public park) for the first time. So far I’ve seen people put charcoal in/under the grill, cover it with lighter fluid or olive oil (oil strongly preferred), let it sit for 20 minutes or so until it all ashes over, and then the fire starts back up again.
How come your charcoal didn’t have flames? That was my biggest concern trying to cook with a pan on top of an open flame.

will cooking it in the skillet like this give it that charcoal grill taste even if its not directly on top of that wonderful charcoal smoke ?

8:07 Maybe cook the steak at room temperature rather than straight out of the refrigerator?

My only gripe is the flipping of the steak so much but that’s just my professional kitchen training. 4 minutes a side let rest for 5 minutes down the hatch

Those were my initial thoughts as well. And he never stated if he let the steak get to room temperature before cooking

Same thing happened to me when I was cooking steaks, it was too well done despite taking it off the grill at 130 degrees. So what I did next time was I took it out at 120 degrees and it was perfectly medium rare.
