    QUICK & EASY FISH FILLET ON THE CHARCOAL GRILL
    Note: this recipe works best with thicker cuts of fish
    Season the fish fillet with your favorite rub or seasoning. We used kosher salt and black pepper. Optional: arrange slices of lemon on the top of fillet. Set aside lemon halves for the grill.
    Setup your grill for indirect cooking at 275-300 degrees. We used a small chunk of pecan wood for our smoke, but you can use whatever wood is your favorite. When the grill has warmed up, oil the cooking grate and place fish fillet on grate opposite of the coals. Cover grill and cook 20 minutes.
    After 20 minutes, open the grill and check the fish. It should be close to being done at this point, but you can test it with a fork: Insert fork into the thickest portion of the fish at a 45° angle. Gently twist the fork and pull up some of the fish. If it flakes easily, without resistance, the fish is done. If the fillet still needs a little time, cover grill and continue cooking, checking fish every 5 minutes. Total cooking time usually takes between 25-30 minutes.

    Hey guys! Just came back from your beautiful state. Family and I had a great time. Fish looks awesome. Crispy edges are nice too. Cedar plank I think is overrated and I dont use anymore. Great video. Thanks for sharing

    that's a really nice, good video. Though why not add some actual wood chips or chunks to your charcoal basket? or did I miss something? also, I have smoked salmon/trout that way and have found lemon, or lime, wedges are better than full slices... that way you get your citrus concentration but expose more of the flesh to the actual smoke. awesome though...thanks.

      We did just a chunk of pecan wood for this cook, I just forgot to mention it on camera 😅 But I do have it noted in the recipe we provide in the description box.
