    In this video recipe Chef Devaux shows how to cook a new type of sushi roll, using a very innovative cooking technique known as meat glue or transglutaminase (Activa rm), it's used to literally glue together any two proteins, in this video, you will see how it glues together salmon and tuna to form one block of fish, which is then cut into checkered sashimi slices of salmon and tuna. These innovative sashimi slices are then placed on a simple ura maki sushi roll (inside-out roll) filled with sliced cucumber. Then this roll is cut in to individual sushi pieces to make the royal sushi roll.

    In America they are addicted to fried sushi rolls and cream cheese. I grew up in a place where traditional sushi was all you would ever get. Until recently, I shook my head at these fried cream cheese impostors. Not anymore. Although traditional sushi is and always will be amazing, this diversity is refreshing and tasty. I'd like to learn how to make these types of rolls to add to my traditional sushi platters for my western friends when they come for dinner parties. I love your channel and appreciate all the work you put into these lovely lessons. Thanks man.

    This was so beautifully filmed! Your close-up camera angles were perfectly arranged. It looked as good as any commercial work I've seen.
    That aside, I experimented with fresh basil on my last tuna roll and it came out pretty good. I laid a layer of basil on the nori before adding the rice. It was a little difficult to roll, but the result was worth it. The basil flavor was a little strong for the fish (perhaps I used too much) so I probably wouldn't put it on a menu. Good enough for home though. The carrot-ginger sauce went well with it.

    Love your videos!! Thanks for all the amazing tips. Have you had professional training as a sushi chef? One of my favorite dishes at a now defunct sushi bar was something they called Atomic Lobster or Atomic Shrimp. Basically it's tempura fried with eel sauce and mayo drizzled over the top. I've tried to duplicate but never been very successful. Not sure where the spice was? In the tempura or on lobster/shrimp?They always heated it up in toaster oven which has never worked for me. Maybe you could come up with your own Atomic Deveaux!!!

      Obviously it's very hard to replicate something based on a description but I like the idea of this Atomic Devaux roll with lobster or shrimp. I'll place it on the suggestion list.

    Can you try to make a dessert/fruity kind of sushi because the way you explain and show how to do things is really easy to follow and I think fruit sushi or something like that would be something very unique to show off to your friends (whoever you're showing)

      nope no restaurant at the moment, hopefully one day soon I will open a sushi restaurant, when I do though it will not be about making money but rather more of a test kitchen focused on creating new ideas and trying to just cook better sushi.

    Your videos are top notch and very informative, always a pleasure to watch. I suggest a video on perhaps catching a fish or buying fresh in market and then showing proper filleting techniques, also adding your expertise/advice on what is proper sushi grade fish.

    Something I discovered to be tasty and universal(for people who are afraid of raw fish) is sushi using turkey bacon. Just lightly grill the turkey bacon strips on a pan with some nonsticking spray and serve them anyway you imagine(the light salty flavor goes good with the buttery vinegar rice flavor and wasabi). This is a GREAT alternative also when wanting to make the egg/omelette style sushi(bacon and eggs). Just dont overcook the turkey bacon or itll get crunchy after cooling and hard to apply to the sushi. It marries with the asian flavors quite well I promise though Im not sure about real bacon which can be fatty and high in calories.

      Interesting suggestion, you know I have never had turkey bacon.... will have to give it a try and test what you are talking about, but i'm sure it probably works because I have noticed other slightly salty foods that do work well with the sushi rice QuabmasM

    In response to your end of video question: so not exactly sushi, but I've made deep fried ice cream a couple times modeled after sushi rolls.
    You take your preferred ice cream (I think strawberry tastes the best) and roll it into a snake with your hands, leave the snake (about the diameter and length of the inside of a sushi roll) in the freezer for a while, and then wrap it with pound cake slices so no ice cream is exposed and put it back in the freezer to cool off again. Once it's hardened a little coat it in tempura batter, fry it in oil, and then cut and serve as if it were a sushi roll.
    You can add a lot to it too. You can bread it with whatever sounds tasty. You can also put slices of strawberry inside the pound cake with the ice cream so it looks like pieces of tuna in each roll or cut thin slices of apple and layer the top with them as if it were slices of avocado on a regular sushi roll. Make sure you eat it with friends though because it's really rich and overpowering if you eat too much.

    Davy, I adore you now for another millionth time! This is basically piece of culinary art!
    Just an idea, how about sticking the salmon & tuna 2 by 8 rather than 2 by 4 and then covering the entire rice surface with fish and serve on the cylindrical side? And changing cucumbers for avocado might bring in more sophisticated taste maybe? What would you say?

      sushi grade is a basically a term used for fish that is good quality and fresh, the freezing is done to kill any possible parasites that may be in the fish, although very few fish have parasites government policy dictates that all fish destined for raw consumption by the public should be frozen to ensure its safety.
      Yes the meat glue is safe for consumption, but as with everything in life don't overdo it. cfreeman5100

    The most efficient way to cut and layer avocado for a caterpillar roll is to place the halved avocado seed side down and start slicing while sliding the avocado with opposite hand. It's hard at first but keep practicing, it's worth it.
