Today I baked with same recipe , it turned really really yummy, I used the same mixture and baked some cupcakes , it took 30 mins for 176 degree centegrade

Tried this cake a few times. It is as good as they say it is. Only thing I change is I shred carrots, not grate (smaller holes on the grater but not the spiky ones).

The cake was amazing but I had a problem with the frosting. I followed the measurements but my mixture was very liquidy. I had to improvise by adding butter and more cream cheese but still it was not as thick.

Hi, I did it using sunflower oil and it was delicious
I suggest not to use olive oil because is too heavy..has strong flavour..sunflower oil is light

Delicious cake. But, the frosting is extremely loose even with 1 1/4 cup extra powdered sugar it barely held together. More like the consistency of cinnamon roll icing. I’d go with the traditional icing if you want firmer frosting or you’re traveling with the cake.

I make this cake at work. It gets demolished. The raisins and nuts are great in them. This cake is so moist its ridiculous. It never last more than a day.
