Even the flavor changes with the age of the animal. Maybe u only saw lamb, but for example in some parts of europe, "baby" pigs are also a tradition, and same with cows from all over the world. For example here in portugal (for cow, which is the most normal) we have: vitela, novilho, vaca (first from 5-9 months of age with max 180kg; secound from 9 months up to 24 months and with more than 175kg; vaca would be the literal meaning of cow, which is considered to be if the animal has over 200kg). So you see, it's incorporated, and in some types of foods, there's traditions involved too. Also, typically, the younger the animal, the more expensive it goes for ( because of the more tender meat, more flavorful,etc.)

Goat cheese is so good! Put it on a fresh slice of sourdough just after it finishes baking and resting with some butter and maybe even honey and it is amazing

Ham and vegetable gelatin cake recipe: Ingredients: 8 sheets clear gelatin 400 milliliters veal stock 100 milliliters dry white wine 2 tbsps vinegar salt cayenne pepper 150 grams carrots 1 small green bell pepper 3 small pickled cucumbers 300 grams cooked ham (fat free) Preparation steps: 1. Soak gelatin sheets in a bowl of cold water until softened, about 10 minutes. Combine veal stock with wine over heat. Add gelatine and dissolve. Season heavily with vinegar, salt and cayenne pepper. Pour into bowl, swirl slightly and place in refrigerator. 2. Meanwhile, peel carrots, cut into slices and blanch in boiling salted water for 5 minutes. Rinse carrots and drain. Rinse bell pepper, cut in half crosswise, slice into small strips and blanch for 5 minutes. Rinse bell pepper and drain. 3. Cut ham into cubes. Cut cucumber into slice and arrange in bottom of a bowl. Make a ring of peppers and put vegetables and ham in the center. Pour jelly over top and refrigerate covered for 4 hours. Serve. Enjoy this delicious and healthy alternative to your usual cake😋
