    The chocolate has been tempered, which allows it to hold it's shape even at room temperature. But it's not unusual to freeze blocks of marble and use for this kind of work. Also, it is usually done in a separate area of the kitchen, away from stoves etc.

    you can buy them from most hardware/tool stores. I use a plastering trowel and it works really well.
