    The table thing with chocolate is called tempering. Chocolate has to be cooled consistently to the right temp before pouring into mold.

    석재 전문 업체입니다.
    석재를 긁을때 석회 가루가 미세하지만 떨어집니다. 화강석 섭취시 몸에 안좋습니다. ㅠㅠ 참고하시길 바랍니다.

    That way of grinding the cocoa beans is the way old Aztecs used to do it. Still today in many places of Mexico you can buy chocolate candies prepared exactly in this manner. When Spaniards arrived in Mexico, they were surprised with the sweet taste of chocolate. They took it to Europe and added sugar and milk. Vanilla also came from Mexico.

      yes, it's still processed with the metate and the molinillo, that's the Mexican name of the instruments used, indeed, both cacao and vanilla originate here as well as many other common ingredients everyone uses nowadays 😊

      Vanilla was originally grown in a town called Papantla in the state of Veracruz in the Gulf of Mexico. The best vanilla sold in the world is still harvested there.

    one thing i really admire about the food industry in Korea and Japan is they keep their kitchen restaurant impeccably clean super clean as clean as a pre opp surgery room and to me the most important thing i look at before eating at a place is if the restaurant is clean i dont care how good some tells me a restaurant is and how amazing their food is if they have a dirty environment its a no go for me

    2:26 - Tempering the chocolate. Gets the chocolate to an even temperature.
    4:44 - This shaking helps set the chocolate into the molds and removes air bubbles.
    7:00 - Melting sugar. This will be used to make Caramel for the chocolate centers.
    12:21 - Adding the backings. This will seal the caramel into the chocolates.
    14:42 - Molecular blast fridge/freezer. Cools the chocolate evenly.
    15:30 - Hiding the evidence.

      The fire is just a way to melt the residual chocolate and clean it off. Many chocolatiers do that on surfaces and equipment.

      @@Y3ypn-am0p17 это темперирование шоколада. Т.е. нагревание и охлаждение до определённой температуры. После сего процесса конфета не будет таять при комнатной температуре, даже в руке растает не сразу.

      Yo, I need to find a way to get me some of that. I bet it's crazy expensive but probably well worth it. Idk the Korean food prices but I know in America most of the ingredients he/she was working with are pretty pricey. Plus there was a decent bit of work that went into making that. Which I appreciate so much, I love when someone owns a business such as this and you can tell it's made with love and perfection. That's where I think this world is going wrong with its products. It used to be something people would make to the best of their abilities because they had pride in their work/product now it's all about how much you can push out in the quickest time which kills a good product. Which is mainly on greedy companies choosing more money over a good product and sadly the workers have to fall in line and be worked like dogs. This creates resentment from the workers to the company which leads to an even worse product. Quality>Quantity

      I have a hand grinder I must tell you nothing can match the experience I use hand grinded spices some times for ma matka dishes
