This castella cake ia available in Singapore n Malaysia. This cake is frm Taiwan. When its first arrived in Singapore it formed really long q. Its is made in your very eyes frm preparing n til its done. Gotta wait for more than half or an hr til u get ur hands on it. Haha. N of cos it smells heavenly! In Singapore Ah Mah is very popular, always long lines, and more branches increasing in Singapore. Their maximum 2 slice per person is a bummer but It seems intentional to create the illusion of "artificial shortage" and buzz, very bold marketing but surprisingly it works on the citizens

Cooks use recipes,
Bakers use formulas.
tons of eggs separated. you whip the whites and that creates a lot of air. these have a lot of cracks on top. looks like perhaps it was baked just a few min. too long, or the eggs were whipped a bit too stiff. Not criticizing because it looks so delicious and I'd love to try; just an observation.

I have tasted this cake when i was in johor bahru , eh i dont find anything special about it , it just taste like your regular spongecake but with jiggly twist on it , if you are wondering why the cake is so cheap is because RM or MYR the currency rates is really damn bad , it might be only 5 usd for you or for me but for those citizen in malaysia whom work and survive , its like 22 dollars , they both have the same decimal value with our money ..
