Looks great! I grew up on Salmon Patties. I could eat them all day. Have you tried Salmon Wiggle? (Or called Salmon Pea Wiggle) I love that too. I ate seafood with my family every week until I was 7 when I was rushed to the hospital because I developed an allergy to seafood. So because of that my mom and grandma would make alternatives for me when they cooked seafood for the family. Of course it can't replace scallops or crab legs but salmon patties and salmon wiggle was always a favorite of mine.

I learned how to make them by watching her and when I moved out on my own I made them all the time. I haven't had them in years and she is 98 she'll be 99 this July 20, 2023, so she doesn't cook anymore. I think I will make some and take them to her and my mama who takes care of her now. My mom taught me to reserve the liquid. Instead of adding another egg and more filler, she'd just add some of the liquid from the can. She also coated the patties in a light layer of yellow cornmeal just before frying. It was a breakfast dish served with grits. Leftover patties (somehow there were always 2 leftover patties) were sliced in half, heated and became two sandwiches.

I eat the whole content, bones for calcium, skin, flesh and juice for the omegas. Delicious and very heathy.
Update 3/23/2022: My preference is stated above. This also applies to canned chub mackerel, herring, sardines and tuna of course. Since all of these are packed with sodium, I try to be careful with sodium intake. I also use fresh salmon and other non-canned fish such as catfish, swai, whiting, etc. I tried whole frozen sardines (about 8-9 inches long) but never again! These are WHOLE without any cleaning, scales, head, tail and NOT gutted. Plus, after all the cleaning I did, the bones, oh the bones, nightmare bones! It even has hair-size bones. I managed to get through this, and it has a moderate fish flavor, but never again!
Favorite is steamed Kippers and egg-substitute, yummy!

They r meant to eat. Every bit of the salmon is great! I think some ppl think they r hard bones. They r pressure cooked before canned. So, they have a delightful crunch!

I have made fried salmon patties for years! A very simple recipe. 1 can of drained salmon, 1 egg, 1/2 chopped onion and just enough flour to hold the patties together! Fry them in vegetable oil for a very short time! And yes, I do not take the bones out! They are actually a good source of calcium and you can crush the bones with your hands as you mix and form the patties!

What a wonderful recipe thank you so very much… I’m 70 years old and I remember my mom making these for us all the time we had a family of seven and it was an inexpensive way to have a fish meal… But I never knew what she put in the mix to make it and she also made what she called a salmon loaf and I’m not sure what she did for that either so maybe you can come up with a salmon loaf recipe it’s probably just the same as the patties but she put it in a pan about the size that you mixed the patties in and so anyway thank you again what great memories and guess what I’m making for dinner tomorrow night!

I take left over mashed potatoes and add about 1/2-3/4 cup. The rest is mostly the same except I add more chopped onion and just one egg. I use less cornmeal than flour. Just recently learned another option which is remove about half the flour and replace with cornstarch, which makes the patties much crisper. They are just as tasty cold to me as hot.
