- I’ve never been a fan of meatloaf, not really my thing. But this is a different story!
This Italian Meatloaf Wrapped in Pancetta is a dish that is sure to please any Italian food lover. The Italian meatloaf is made with a mix of beef and pork, some vegetables and a few secret ingredients keeping it juicy and super tasty. It is then wrapped in pancetta and cooked until it is super juicy and crispy on the outside.
This version a little like an arancini whereby it contains a small piece of mozzarella cheese that oozes out from the centre. This recipe is sure to become a family favourite for both meatloaf lovers and otherwise. Perfect for the festive season and to impress your guests!
I like it with buttery roasted potatoes and green vegetables like green beans or asparagus. But you could also serve it with a salad.

OK, I just learned something...I did not know I was cooking this style of meatloaf for over 40 years!! The only thing I have done different in the past is I have added finely chopped green pepper and red onion...not too much but just enough to get a hint of the flavor...oh, and herbs de Provence, just a pinch or two. Got to have garlic mashed potatoes with finely sliced shallots that have been cooked in hot avocado oil, just long enough to a golden brown and placed on top. And, and a good bottle of Chiante. The video presentation was an A+. Oh, I forgot the Italian baguette. Frank, the old half German dude from NC.

Next time I make meatloaf this is TOTALLY how I’m gonna do it. Yum!
To make the bacon more durable, you can cover it again with baking paper or cling film and roll it out flat with a rolling pin. It will better stick together an be more stable. But don't forget to remove the second layer before you wrap the bacon arround the meat 😂😂 Well done and nicely filmed. Thumbs up 👍
