2:54 as a guy who lives in Iowa, the borders are like this because most of Iowa is farms. So the county borders go along the farms. Witch are straight.
(Edit) The left and right state borders are rivers, and the north and south state borders are just almost straight lines.

I love the toes on flags map. I went and looked up the flags and can versify. They were also if your cases of implied toes which were not accounted for. These are instances in which there was a person or animal, but the foot was behind something else.
