// INGREDIENTS //
- 1/2 cup sugar
- 1/4 cup water (a tiny bit less than exactly 1/4 if adding rosewater)
- 1 heaping cup of raw cashews (unroasted unsalted)
- 1/8 tsp freshly ground cardamom (optional)
- 1/4 tsp ghee (optional)
- Dash of rosewater (optional)
- Edible silver leaf (optional)
// RECIPE //
1️⃣ Using a spice grinder or a high powered food processor, make cashew "flour". Be careful not to over-grind as that'll start releasing oil! To get a smooth end result, use a sieve to separate the chunky bits and grind those again.
2️⃣ To a nonstick pan, add sugar, water, and rosewater on medium-high heat. The sugar will dissolve, then wait for it to boil and cook for another 3-4 min. Continuously stirring.
3️⃣ Add the cashew flour in on low heat and start mixing.
4️⃣ Once completely mixed, add cardamom and ghee, and continue to mix, ensuring you're scraping down the sides.
5️⃣ Continue to cook and mix until the batter gets thicker and starts collecting in the center of the pan. Depending on your stove,
and pan, it will vary how long this takes - for me it took about 12 min. To test if its ready you can scoop out a bit and try to roll it into a ball between your fingers to see if it holds its shape. Remove from heat.
6️⃣ On a lightly greased parchment paper, add your mixture and let it cool down 3-4 minutes.
7️⃣ Once cooled enough to be able to handle, start kneading lightly just for a min- slowly forming a soft dough. You can grease your hands a bit if needed.
8️⃣ Then form into a ball, place another parchment paper on top, and roll into 1/4 to 1/2 inch thickness.
9️⃣ Add your silver leaf if using, and then cut vertically and then diagonally to make diamond shapes.
🔟 Carefully peel each kaju katli off. I like to store in an airtight container in the fridge for at least an hour for the best texture!

@Sachin PahadiRajput what you're saying is the equivalent of an outsider thinking all Indians are poor, uneducated, can't speak English, eat only 'curry' or naan and butter chicken. They're all misconceptions. Africa is a continent with differing cultures from country to country. I agree they were colonised like we were but to assume they no longer have a culture is simply ignorant. Infact to some extent, some African countries have similar cultures and moral values as that of Indians and if there are African people willing to educate themselves about India, the least you could do is not blatantly show your ignorance. It's thanks to people like you that India's name is getting tarnished across the world.

@Sachin PahadiRajput India has no culture. You don’t have Indian name either. Just Aryan names. Look up the Indo-Aryan migrations. The Aryans created the racist Hindu Varna (skin color) caste system and enslaved the native Dravidians for 4,000 years.
Meanwhile many Africans have traditional African names. Especially middle names. Also not all Africans have English/French names. Half of Africa is Muslim with Islamic/Arabic names mixed with African names.
And many Africans are animist too with complete African names.

This is my first Diwali without my family. I grew up in the Philippines and we always celebrated together. But my dad got sick and we had to fly to India last March for his treatment. He ended up passing away in June and my mom chose to remain in India to handle business there. I had to fly back to the Philippines to sell all our stuff. It's so lonely :(

I'm not Indian but kaju katli is one of my favorite sweets! When I saw that you uploaded this video I was immediately excited to try out your recipe, especially since Indian sweets are hard to come by where I live :)

I was unsure what religious holiday a man at a local gas station I frequent was celebrating but knew there was some significance, as he had his forehead adorned with a beautiful dye powder of sorts. I am a bit awkward but wanted to ask him what it meant, yet my antisocial depressive tendencies got the better of my curiosity. I appreciate you sharing your culture, the world really is such a beautiful map of traditions and sometimes it is difficult for people to appreciate them without a social interaction of sorts, and your videos allow people a portal into this with low stakes, I mean who doesn't appreciate heart-felt and open stories and yummy food?

I empathize..just completed the first decade out of India. Lost both my parents in the recent past. Diwali isn't the same anymore. Depression days guaranteed. But I'm trying to create new traditions with new people. Life must go on

Great short. I have been alone for Divali for 15 years since I left home for university and the only time I was home, my mother was in hospital for emergency surgery.
I finally have a house now so have gone all out even though my parents are far away in another country. Couldn't make sweets myself, but will definitely try this recipe.

When I was young, we had a cultural diversity day at school and everyone brought in their favorite dishes from their culture/ country. A girl from another class brought this in and I was immediately obsessed! It was so delicious, I asked her what it was but there was a slight language barrier and I was unable to determine what it was (also go American public schools for not proving that girl a translator 🙄). Every so often this would pop into my mind, as I got older I would go down rabbit holes on the internet trying to find a recipe or a photo I could identify with no luck.
How crazy this shows up on my feed randomly so many years later!! My mouth legit just dropped open, I cannot thank you enough for sharing this 😭✨💖

I visited India on a business trip back in 2011. Bangalore, Chennai and New Delhi - as an African American woman I got so many stares and wondered how I could stand out when the Indians were just as brown as I was, some darker.
My business associates told me, many had never seen a Black woman in the flesh. I stayed at all the Taj Mahal properties and visited Agra/Taj Mahal which was so beautiful. All the food was delicious everywhere we went. ❤
The country was elated and happy in the streets and everywhere we went because they won the World Cup.
I got home sick after about 1 week- but had an awesome time.
My mom left her homeland and didn't see her family for over a decade too. Hard to be without support, but she made it happen.

I have lived away from home for 10 years. I've missed a lot of holidays with my family and spent many alone. I get how lonely it can feel. I'm glad you were able to find some comfort in your food and I hope you continue to find happiness and comfort in the small things.
This really resonated with me. I am on my way back from visiting my family. We just celebrated an uncle's birthday but this will be the first time I will not be celebrating the holidays with my parents.
I have been really homesick lately and it makes me think of my Dad a lot. He has not left the US in over 20 years and I often wonder how he manages when I know he misses his homeland so much.
My mum hasn’t been to Jamaica in 20 years but I’ve realised of late she talks about her grandma a lot more makes me feel bad even tho I know it’s not my fault 😂

This recipe looks awesome. Also, thanks for showing the cuts at the end. My grandma cut several sheet pan dishes (baked kibbeh, baklava, and even some cakes and cookies like that) but I never knew how she did her cuts. It looks so simple but really elevates simple flat foods!
When I was young I was always annoyed that my mum would give me the piece that wasn't fully covered in silver. Now that I am grown up I kinda appreciate it.

This is awesome :3 yesterday I was invited by a friend from Nepal to participate in a celebration of one of the nights of Tihar. It was so condensed compared to her stories of seeing it in person and the videos she showed me, and I could tell it made her a little homesick, but the fact that culture can be brought back through food and home-celebrating is so beautiful :-)
My mom misses her home, I'm still young and have mental problems, but she wants to leave and go back home. She doesn't care that I'm sad and depressed about her leaving especially since i have constant depressive episodes each month. I want her to be happy but i too want to her to be in my life but each time i think about it I think that I'm not worth staying for but at the same time, i think that i can't control everything in life and i have to let people go even if they don't care about me

Omg this was one of my favourite foods as a kid. I used to eat so many Indian desserts with samosas and pakoras from the Indian grocery store near my school before they closed down! I never knew what any of the desserts were called! I can’t believe it was vegan all this time! I am going to make it for sure!

I don’t start to realize how much our immigrant parents have to go through until I got to be in my 20’s. If I could give back all of the years they’ve had to work so hard and spend time in loneliness in a country that was not their own so that I can have a better future, I would do it in a heartbeat. ❤
Our family truly loves us, they show us love in so many different ways. We take this for granted. That what you just mention is so crazy to me because I woke up today thinking of my family. We are far away in states. Thinking if how many Holidays I'll be missing. Now, our families are both immigrants from different countries knowing they cannot leave us behind they stay with us to give us a better life then they had while they are probably low key sad for leaving their homes. Again, some people, like myself take this for granted. 😭 I miss them all

I cant imagine what immigrant parents have to go through. My dad illegally immigrated from Mexico to the states when he was around 25 only so me and my family could have a better life then in Mexico. Ever since then he talked about he wished he could go back to Mexico in order to see his family again but the only reason he isn’t is because im still a minor. I know how hard it would be to not have him but i feel horrible that im the reason he hasn’t seen his family in so long especially since one of his brothers and his mother have already passed. My dad is now 50 years old, its been 25 years since he’s seen his family and his home, I cannot imagine going through that.

I guess I'm lucky in that reguard because I've never been in one place long enough to feel attached, as a result I've never been homesick since everywhere and nowhere is my home. Ngl I'm a bit jealous that some people can feel so deeply connected to a place and culture that they feel nostalgia & longing without it.

My polish parents moved to England with an Infant (aka me) with less than £1000 to their names, just to try give me a good life, during the first 2 years, they've flew between England and Poland several times just to be with family and people they trusted, anyways they started a trend because now over half of my vast polish family lives nearby, my grandparents literally live across the road
