Churros! 🍫

- Ingredients
- 250ml water
- 60g unsalted butter
- 1/2 tsp vanilla paste
- 115g caster sugar
- Pinch of salt
- 140g flour
- 1 egg
- 1/2 tbsp ground cinnamon
- 180g dark chocolate
- 150ml cream
- Oil for frying
Method
1. Start by adding the water, butter, vanilla, salt and 15g of sugar to a small pot and place on med-high heat.
2. When the water just starts to boil, add the flour and whisk. Cook this for 4-5 minutes on low, whisking the whole time.
3. Turn the heat off and let the dough cool for 5 minutes.
4. Add the egg and beat it in well until smooth. Place into a piping bag (note the plastic ones are not normally strong enough, so use at your own risk).
5. Add the rest of the sugar and the cinnamon to a shallow bowl and mix, set aside for the churros to go into after frying.
6. For the chocolate sauce, simply add the chocolate and cream to a bowl over a pot of boiling water and whisk until smooth.
7. To fry the doughnuts, heat the oil to 160°c and carefully pipe 10-12cm long pieces of batter into the hot oil.
8. Fry until golden brown on both sides.
9. Removed from the oil and once drained, dust in the cinnamon sugar.
10. Serve with the sauce and enjoy! - Jak na to + styl

In the Netherlands we have a dish called 'Kapsalon', which translates to hairdresser's salon. It consists of thick fries on the bottom, shoarma or kebab in the middle and cheese on top. After being grilled it is topped with vegetables and served with garlic sauce and/or sambal. I would love to see you making a version of this Dutch hangover dish! Juan

ANZAC BISCUITS
Ingredients:
150 g plain flour
80 g desiccated coconut
90 g rolled oats
110 g caster sugar
55 g brown sugar
125 g butter
25 g (1.5 tablespoons) boiling water
2 tbsp golden syrup
1/2 tsp bicarbonate of soda
Preheat oven to 180C. Line two baking trays with baking paper.
Place the flour, coconut, rolled oats and combined sugars in a large bowl. Mix together.
Place the butter and golden syrup in a small saucepan over a low heat to combine. Let cool slightly.
Combine boiling water and the bicarbonate of soda in a small bowl. Add to the oat mixture along with the butter mixture. Stir until well combined.
Roll tablespoonfuls of the mixture into balls and place on the lined trays, allowing space for spreading. Gently press each ball to flatten slightly. Bake for 12 minutes for chewy or 15 minutes for crisp biscuits.
Set aside on the trays to cool completely. The biscuits will harden as they cool.
*These biscuits were sent to the troops - usually in air tight metal tins - as a gift from home.

Pennsylvania Dutch Pot Pie, and it’s gotta be authentic! It’s like a stew, not a meat pie at all. Like a pie in a pot. Those square, thick noodles are handmade. So good! A comfort food from my childhood, living here in Lancaster, Pennsylvania, USA.

One of my favorite desserts. Here in Brazil we make a thicker churro and put dulce de leche (an improved caramel, especially the ones from Argentina and Uruguay) inside of it. I have to hold myself to stop at just two or three 😂

That moussaka was definitely awesome, but I'd love to see his take on pastitso. Greek cuisine has so many delicious, but for me personally, pastitso is my favorite. Its such a great comfort food to make and eat on a lazy Sunday when its snowing outside and you have no reason to leave the house.

My favorite dish, very underrated and mostly unknown outside of german speaking countries! A personal recommendation: Cranberry-jam as a dip. Please make an Austrian dish called “Schnitzel” it’s so delicious 🤤
For the coating whisk together 1/2 cup sugar and cinnamon in a shallow dish, set aside.
Heat about 1 1/2 inches vegetable oil in a large pot or deep saute pan over medium-high heat to 360 degrees. Prepare the dough while oil is heating.
Add water, butter, sugar and salt to a large saucepan, bring to a boil over medium-high heat.

Add flour, reduce heat to medium-low and cook and stir constantly with a rubber spatula until mixture comes together and is smooth (a few lumps in it are fine).

Transfer mixture to a large mixing bowl, let cool 5 minutes.

Add vanilla and egg to flour mixture then blend immediately with an electric mixer.

Blend until mixture comes together and is smooth (it will separate at first but keep mixing it will come together).

Transfer to a 16-inch piping bag fitted with a rounded star tip (no bigger than 1/2-inch). I recommend using the Ateco 845 or Ateco 846 (in the kit).
Carefully pipe mixture into preheated oil, into about 6-inch lengths, cut end with clean scissors.

Let fry about 2 minutes per side until golden brown.

Transfer to paper towels to dry briefly, about 15 seconds (don’t wait too long or they’ll be dry and the sugar won’t stick as well).

Then transfer to cinnamon sugar mixture and roll to coat.
Repeat process with remaining dough (frying no more than 5 at once, separate with metal tongs if they stick a little).
Let cool for a few minutes then serve warm.
One the best chef i have come across on yt, always makes dishes from around the world in a far more authentic way than what even the locals would 😅.

How about this Mediterranean dish?
Line a soup plate with fresh mackerel fillets.
Drizzle them with the juice of 1 lemon.
Top with plenty of olive oil.
Drizzle with a little balsamic vinegar.
The acids in the lemon juice cook the mackerel so the outside of the mackerel is cooked and the inside still remains a little raw.
Optionally, add salt and pepper for extra flavor.
Enjoy your meal!
