Maybe with Russian/thousand island dressing, or use that for a dip. Then a rye bun? Or add caraway seeds to the sausage? I’d add a sharp Swiss cheese, like Emmental or Gruyère. If making everything fresh, it would take about 5, or more, days.

Wooden cutting boards are a pain to maintain and keep clean, because whatever raw meat or poultry you slice on it, the wood absorbs all of that bacteria and gets so nasty. Also washing wooden boards can be difficult because of what happens when wood has too much moisture in it.
Go half & half with the cheese... Half swiss and half smoked provolone. You could even blend the two together first and pour it into a cheese mould, but i just alternate slices in a stack and then cut. I get the gooey cheese of the swiss but i also get the stronger flavor and wonderful cheese pull from the provolone

Shaved ribeye ground into sausage? Would need to be in a beef casing, because otherwise you're not gonna get that good Maillard reaction

Should do a short video on cleaning and care of your cutting board.

For the cheese cubes, you could always use a potato chip maker (slice the cheese and then then put through chipe maker)
