This is the first time I see a non middle eastern food blogger cook middle eastern food right. Yes you changed some things to make them slightly healthier (like not deep frying the falafel or not adding ALL OF THE OLIVE OIL like we typically do in the middle east) but you still stayed within the original ideas and recipes and I really appreciate that

Yup .. I agree with you as an Arab girl and specially a Palestinian one .. I’ve found that Caitlin was the first food blogger who made some Middle Eastern recipes and they were correctly with some little changes to .

prince_ depp like I said she modified it to make it healthier but she did stick to most of the traditional ingredients. I’ve seen food bloggers making “hummus” from white beans and not chickpeas, or tabule from broccoli. As healthy modification go this is pretty true to the original.

Dana-Leigh Formon unfortunately no, there is no such thing as vegan feta, but you could veganize haloumi with tofu :)

I actually really love this video. I love that you used authenticity and creativity, with the little tweaks, to make the dishes. The hummus looks unreal, even better than how some of my family members make it (sorry not sorry to them 😂). You know you’re doing it right when a middle eastern person’s mouth is watering!
As a middle eastern, I'm super impressed with these! I've grown up with every single one of these meals and I think they're pretty special. Fresh ingredients - simple cooking - max flavour!

I made your hummus recipe few days ago and peeling the chickpeas made them INSANELY smooth!!Definitely worth the effort; ) . The only downsides was it took me half an hour to peel three cups of cooked chickpea and I just shouldn’t be doing it before my exams......
Yayyyyy im middle eastern and im so happy and proud to be and this makes me so EXCITED because im also vegan. Majority of middle eastern foods are already vegan or can be veganised so this is so interesting and hopefully inspiring to others. ♥️

Chelsea Harvey ooooo good idea! I second this! I haven't seen too much Indian cuisine on her channel besides maybe a chana masala? I'd love to see her explore some more options as Indian cuisine can be very vegetarian (and can be easily veganized) friendly :)

It's true. I'm Indian who is Vegan and I grew up on Indian food which made my transition to pure veganism very easy since most Indian cuisine is already vegan.
@@emalinel in a previous video she said she doesn't prefer indian curry, she likes that better!
basically all you did were Lebanese dishes only but still looks good and delicious and i’m happy that you did it in healthy traditional way and i can’t wait to see more of your new Middle Eastern recipes 😋😋😋
Caitlin didn't lie when she said it was going to be the smoothest hummus I've seen in my life. I licked that food processor clean!
I didn't even remove the skin of the chickpeas properly, I just immersed the cooked chickpeas in cold water and drained the floating skins separately from the beans.
I used the same smooth tahini as Caitlin though, maybe that compensated for my half-hearted skin removal.
This recipe is a game changer. I only buy store-bought hummus in a pinch, but now I won't ever do it again.

This may be my *favorite* post! It all looks so good...I love a fattoush salad & like you I add chickpeas but I skip the pita & roast & season the chickpeas for my crunch. I love that you did all this oil free too 💚

Yess! I got so excited when I saw the title lol, middle eastern cuisine is so delicious, like you said usually there isn't a lot of ingredients but the flavors used are bold enough to stand alone and creates really fresh and savory dishes. and that hummus looks so silky 😍

Hallo from Austria. I'm so excited with all your recipes. Thank you so much for all the effort you put in everything you do. If I could suggest something, I think it would be better to use caramelised onions instead of raw in your falafel recipe for a more subtle flavour. I would really love to see you make some greek recipes as well. I'm Greek and we have a lot of plant based meals that are really delicious!
You have no idea how happy this makes me. I grew up with middle eastern food being Arabian myself, (Jordanian) your inspiration for making some of these dishes are wonderful. Though I can't say I've ever had hummus that smooth. Its not a problem but It's usually thicker that I'm used to but It gave me the idea actually to thin it out for my veggie wraps. Falafels are my absolute favorite!! I make them all the time. It's one thing my husband never gets bored eating either since going vegan.

Wow, all of the recipes look absolutely amazing 😍 the falafels and hummus makes my mouth water just a bit more though! I usually make my hummus with canned chickpeas and although it's faster to make it that way I can really see a difference in texture etc. when using dried and PEELED - I have to try this next 👏🏼 such a good video from a wonderful creative youtuber!

Sumac is wonderful in a lentil soup. It's another thing we eat in the middle east during the cold season but it definitely can be eaten any time! good for you for finding soumack and zaatar in the states! im israeli and lived in upstate ny for a while... desperately missing my israeli spices! you did a great job. a pro tip for tabbouleh -- add pomegranate seeds. it is INCREDIBLE.
I made hummus using your recipe and it was amazing! The first time I did it I peeled the chickpeas but the second time I didn't, I didn't notice a significant change in the texture at all and I saved a lot of time and frustration, just in case anyone was wondering if that was a necessary step. But the roasted garlic cloves make this hummus 30000x better than store brands !!!

Just a few comments on the recipies you should definitely try...chummus is traditionally made with the water that the chickpeas were cooked in and not plain water!, And when I make the Babba Ganush I fire rost the aubagen, peel it shred it with a fork and then mix it with Tahini lemon juice garlic salt and pepper. I love your videos 💗
