Phew, looks like a lot of work! I remember working at a BBQ place and, even though I was just a cashier, we had a $600 catering order come in and my manager was like, "yeah that's fine."
The cooks were so busy and I had to turn people away. Worst day ever.
but u got a decent tip i asume so thats fine.

Who in their right mind serves hot dogs at a wedding
Maybe they wanted something non traditional and the guests were fine with it plus they probably saved thousands of dollars (they could’ve paid 5-8K on food that one actually wants and they end up throwing it out or it goes bad) where with hot dogs and fries they probably only paid 300-500 on the order itself and the guests can take home the leftovers or finish them right then and there
Personally I like the non traditional style I’m not big on fancy foods that I know I’m not going to bother eating anyway hot dogs or hamburgers works just fine for me

Man the grill needs wiped down from time to time if you are going to post videos. I understand it’s impossible to keep it completely clean while using it but man it looks nasty where you scrape the left overs down. Clean that up. Yuck

I’m pretty sure someone comes in and does a deep cleaning of everything in there once the day is done and it was pretty busy with those orders so there wasn’t any down time to do much of anything (if you ever work in the restaurant industry you’ll see what I mean)
Like you said it’s impossible to keep it clean throughout the day i would know I used to work in a small business and she would constantly use the stovetop, whenever I got a chance (which was very rare) i would take the stovetop off and give them a good cleaning only for the stovetop to be used again after I just cleaned them off
