I like the girl who says she is cute and has confidence but is hiding behind her phone because she is shy.
It is truly a fresh breath of air to listen to people being humble and self aware. Most western interviews seem to set 10/10 as the average.
There are a lot of cultural factors going on here. In the US, relentless self-promotion has been necessary for people to compete in our society and economy since the 1800s (just look back at advertisements back then -- they read like today's PR press releases and corporate shareholder letters). Salary surveys have shown strong correlations between how highly people rate themselves (whether warranted or not), and their relative salary within their company or industry.
Basically, we live in a 24/7 rat race for perceived confidence, as a proxy and shorthand for gauging deeper skills and abilities that can't be measured in a single glance or even a 30-minute interview. We're a culture of fake it till you make it.
And that mindset has absolutely bled over into purely social interactions, like what you allude to with street interviewees giving themselves 10/10 on average. With the caveat that we don't know what the total sample is like, b/c we don't see any of the interviews excluded from the final edit, I agree that what is SHOWN are extreme, sometimes garish people who rate themselves higher than some viewers might think. That editing choice is itself a symptom of our relentless need for self-promotion -- content creators (from news media to YT variety interviewers) are incentivized by the inexorable algorithm to give us the most polarizing clickbait possible.
I'd suggest actually going outside and talking to real humans around you. Without a camera, and without the selection bias of edited videos, see if the responses you get are still skewed the same way.
All that said, Asian cultures (well, what I know of Japanese, Korean, and Chinese culture) emphasize conformity. Even if you try to stand out, you don't want to stand out too much (unless you're part of some strong subculture). We feel forced to say that we're a 9/10 or 10/10 b/c EVERYONE around us says they are too. In those Asian cultures, you say that you're a 5/10 b/c everyone doesn't want to stand out. Even if you think you're a 7 or 9, out loud you only say you're a 6/10 b/c you don't want the office gossip to haunt you for being too arrogant or vain.
Both cultural extremes end up reinforcing people's insecurities, just in different ways. Don't be too quick to praise the other side until you've spent a few years working in their corporate offices.

I do agree with your analysis of the usa population mentality being extremely egocentric, self-entitled, "I" to the power n , based on decades of living there.
You fail to see why or wonder about it. I will tell you why, it's all the result of ultra-individualism where usan's think that is the highest form of freedom. Except it's not. Every usan think they are a universe as an individual and that is extremely wrong and dangerous for society. Harmonious functional societies that favor the group and the nation are always happier places to live than egotistic narcissistic nations especially when everybody knows everything in usa is lies pretend, superficial, and that "do not judge me, i am universe of my own" mentality. Individuals are nothing without a group structure and a truly social society. Japanese are struggling to preserve that part of their culture due to bad usa influence.
to be fair, those girl who were the most westernized have also replied 92 or 500 points. I can bet you that those were older than the first ones. The generation coming is more humble because they don't attract men of their same age so they have this confidence issues. Redo the interview and ask the age and you will see I am right.

Two countries have different cultures. Americans value confidence, while Japanese value humility. There is no need to distinguish between high and low

I think they are just acting humble because the Japanese are very sensitive to bragging. Surely they know they are among the cutest in the world. We, certainly don't have girls this cute in America, except maybe some Japanese that live here.

I like that they give such humble, sincere, and realistic answers, while still being self-confident even when they give themselves average or low scores. I also think some of them might secretly rate themselves higher but don't want to brag in front of others or a camera.
Personally, I think cuteness has more to do with personality than looks anyway. Any girl can be cute if she acts cute! ^^

This video was just recommended to me and i really liked it! And i noticed that there really are not many interview channels with female interviewers. This was pretty fun and all the girls seemed super genuine and real. But some of them are definitely more cute than they admit! They should be a little more confident.
Sometimes it was a little disappointing that we couldn't see their full face because they hid it, but i also understand that a little. It is also somehow a japanese thing i think. Like with covering your mouth while eating or laughing as a woman. But in a video to see how cute they are, it was kinda unfitting :D i really wanted to see some of the cute girls fully XD
I must say that the girls are so humble and real it makes them more desirable and cuter to man, and you can tell they are not faking it for the camera, they are simply Strong women

It is important to understand that the cuteness of yours increases the more you accept yourself.
The key is confidence and self awareness and realism. Both can be true at the same time. It's not bad to rate yourself a 5/10 because that's just the average person, most people are 4-6/10 and that's the reality of the situation.

I prefer to interact with ladies (not only Japanese) who are not just prettier on the outside by appearances but also on the inside by behaviour, heart, & soul. One who has a great self-confidence, is supportive, and is willing to embrace everyone's confidence. I salute not just Rara but also a tallest lady in pink who rate herself 500. I am wondering which countries I would fit in and feel normal. I am 5'5" tall, which is considered short for a man, but I don't look like an Asian man. Physically, I am very strong and that makes me appear heavier. For example, if I do jumping lunge exercises, my my leg is as big as my body so I need to balance to stay in the line with this exercise.

There’s so many ways to rate yourself. You could base it off your own standard or a popular standard. You could base it off what you observe around you or you could do it based off what you observe and what others might observe, adding a sort of deviation. It could also go not based off standard or a popular but maybe like the true inter subjective 10/10 girl if you could possibly take that into consideration. You could also rate yourself based off the population as a whole which would include old ladies and chubby children which would put you towards the top with only being young as the main reason for. Such a dumb thing to think about, how could you possibly rate yourself. And then what about all the people from the past? Or if you could possibly bring back every single person to their peak and rate yourself there, where would you stand.

Honestly, I think that it is kinda like in the west. The most beautiful ones give them herself a low note when some should seriously be 3 times the number they give themselves. And the ones that say they are the highest normally they aren't. No mean to offend or anything. It is just a general opinion. Also, Rara is a sunlight, haha I'm subscribing right now

These numbers don't mean anything and are just there to contrast my own personal opinion vs theirs:
ららsan: 90
Left oneesan: 65
Right oneesan: 75
Kurosan: 80
Shirosan: 70
Phone-san: 92 (her confidence really does make her cute 😅😅)
Hat-san: 75
Friend -san: 80
Overall it seems their answers are 20-30 points lower than what I'd consider reasonable which seems like a reasonable amount of low-balling.

first short haired girl, second glasses girl, short haired 3rd girl, the just arrived girl, to me at least 9.5/10.... the rest probably around 8/10.... they all beautiful. somehow the interviewee got 7 different type of personality. the only reason I didn't gave them 10 because I'm not sure if I'm gonna like their personality.
