If the hood part works find out if the hood switch is normally closed or normally open. If the switch is normally closed when the hood is closed wire in a set of wires in series with the hood switch. Mount a toggle switch that is in series. Before starting the vehicle put the toggle switch to the OFF position to make the circuit open. Once the car is started move the switch back to the ON position to prevent an error code.
If the hood switch is normally opened with the hood is open then wire that same switch in parallel. Then before starting the car put the switch in to the ON position before starting the car. Once started move the switch back to the OFF position to prevent an error code when driving.
Most cars and trucks that have the trailer option disable the auto start-stop when the trailer is connected. Get a trailer test dongle and leave it plugged in to the trailer connector at the rear. The car's computer will think there is a trailer connected and not activate this feature. Make sure the dongle is the water proof type or is protected from rain and snow if you are leaving it connected.
Many types of vehicles disable this feature if the AC button is left on all the time. The AC only really works when the cabin temperature goes above the setting. The AC in cars since the early 80s does not burn more fuel if any more at all. They are using heat pump technology and are much more efficient than the ones before the late 70s. I leave my AC button on all the time in my car which is a Nissan product, and this keeps that feature disabled.

You should find out from GM service for your vehicle if it is possible to disable this feature by software, and if they would do it for you if possible for your model of vehicle, and if there are no legal implications in your area. In some locations with some models of vehicles they will do this for you, but you must sign a legal registered waver that you would be responsible and not the dealer in case there are any legal issues. In most states in the US and some of the provinces in Canada it is illegal to bypass this feature. Take care for this. Most dealers will refuse to disable this option by software.
Find out if the hood sense switch is NC or NO (Normally Open or Normally Closed) Probably it's an NO type. You can find out from the shop manual, or by simply measuring it with an ohm meter. You will have to disconnect it to find out. If it is an NO type switch, bridge parallel in to the harness on the pair of wires going to the switch another pair of stranded wires using wire size AWG 20 insulated stranded type wire (even AWG 20 speaker wire would do). If the switch is an NC type then you will have to connect the wires in series with the hood switch.
Run the leads to a convenient location in the vehicle where you can mount an inline toggle or rocker type switch (your choice). You can use most any type of Off/On switch of your choice. Make sure the wires are safely insulated where they connect to the switch contacts. Mount the switch in a safe and convenient way. Now before starting the engine turn on or off as required (depending if NO or NC is required). After the engine has started then toggle the switch position back to where it is supposed to be. You can put some type of label on the place where the switch is mounted to remind you of the required position(s). I would guess if you leave the switch (or hard wire) the circuit permanently set, you may get a Hood Ajar warning, or some type of error message in the car's indicators.
If the installed switch is left in the "hood ajar latch" position it may affect the vehicle's security system, and also when bringing the vehicle in for service the tech will see a diagnostics error with the hood latch switch in his analyzer and start searching for it! The service place will probably charge you for the lost time.
If your vehicle is equipped with a factory installed trailer option you can buy a device that plugs in to where the trailer lights plug in to. This gadget will make the vehicle's system think you are pulling a trailer and in most types of vehicles this engine off option will be disabled.
I have a 2022 Pathfinder 4X4. This one has a push button to disable the engine off. I have to remember to push that button every time I start the engine. Very annoying! This is all because this was started with California regulations and some other places adapted the idea, and therefore all the vehicles with an engine at 1.8 Litres or larger are having this feature. The manufactures want to make all the cars the same rather than one version just for specific locations of point of sale.

When you've manually selected the top gear, the auto trans will start in 1st and shift all the way up to the top gear, NOT hold it in top gear.
