- WILD GARLIC SOUP đ±
Wild garlic season is the best season. It means spring is here, you get to pick your own FREE garlicky goodness, then make some delicious things with it.
I always get very excited about foraging my own food, as itâs not something I am yet able to do regularlyâŠ
SO, obviously the first wild garlic recipe I had to make was a WILD GARLIC SOUP. Vibrant and green, packing a garlicky punch, this smells + tastes of SPRING.
You can find the full written recipe - book in video from @papier - below. enjoy, and let me know if you give it a go in the comments đ
INGREDIENTS (serves 2-3)
1 large shallot
2 large potatoes
6-8 garlic cloves
1 tbsp apple cider vinegar
1 vegetable stock cube
750ml boiling water
Large handful of wild garlic
Large handful of green herbs (mint, parsley and/or basil work)
1 lemon
2 tbsp nutritional yeast
1 tsp miso paste
1 tbsp butter
2 tbsp olive oil
Salt
Pepper
TO SERVE:
Buttered + toasted sourdough (@toast_with_hope sourdough đ„)
Cream
Olive oil
Chilli flakes
METHOD
1. Finely dice the shallot. Peel + cube the potatoes. Mince the garlic.
2. Warm the olive oil in a saucepan on a medium high heat. Once hot, add the butter, allowing to melt.
3. Add the shallot + potato with a large pinch of salt. Cook for 5-10 minutes, stirring as you go, until softened.
4. Add the garlic + fry until fragrant.
5. Add the cider vinegar, scraping of all the caramelised bits at the bottom of the pan. Allow to cook off for a couple of minutes.
6. Boil the kettle, then dissolve the stock cube in the boiling water. Pour into the pan, bring to the boil + then lower the heat + simmer for 10-15 minutes.
7. Prepare the wild garlic (wash well + dry) + green herbs, then add to the pan + allow to wilt briefly.
8. In a blender, transfer the chunky soup + blend until vibrant green + smooth. Pour back into the pot, seasoning to taste with black pepper to taste.
9. Add the juice of a lemon, the nutritional yeast + miso paste, stirring well.
10. Toast + butter the bread, then ladle the soup into bowls. Top with a swirl of cream, olive oil, then a pinch of chilli flakes - enjoy!

Hi Alfie, I love your content but I would love to see longer videos from you with like ideas for meals when guests are over or when you are eating alone and want something good, the short videos make it kind of difficult đ« đ« just saying
Would be sussin with some pasta
NETTLES! they work well in this! Even if just because you're a garlick scared coward and want to replace a third of the wild garlic with nettles (taste like spinach anyway)
But yeah rn im living off of everything wild garlic
